I made a reservation for 12 PM and arrived to find seven other guests, with a bit of space available. After ordering drinks, we started with the corn (Gold Rush) tasting. The atmosphere was relaxed and enjoyable, with engaging conversations and the staff showcasing the ingredients used in the dishes, adding to the overall experience. Here’s what we had:- Corn tasting- Hairy crab with sea urchin and caviar- Hassun (mozuku seaweed, jimami tofu, shrimp sandwich, abalone, marinated fish, wine-poached yamamomo, octopus)- Sashimi (flounder, squid, red sea urchin)- Tempura of sweet shrimp- Toro nigiri- Fried eggplant- Soft-shelled turtle soup- Eel- Soba noodles- Chateaubriand- Tempura rice bowl- Yogurt and Japanese sake ice cream with mango daifuku- MatchaEvery dish was delicious from start to finish. The pacing of the dishes was perfect; I was savoring the sea urchin while sipping my drink, and the next dish would arrive just in time. The meal lasted about two and a half hours, and I was so comfortable that I lost track of time. During the course, they asked if we wanted to order additional dishes. There were three options available, but I chose not to add any. I believe the fried fugu was around JPY 2,500.At the end, they kindly packed the leftover tempura rice bowl for me to take home. I enjoyed beer and Japanese sake, and the total bill was around JPY 39,000. Less

This was my fifth visit. It had been about two years since my last visit, and I finally got to make my next reservation. With such a long gap, my expectations naturally rose, but after finishing my meal, I was reminded once again that "Ao is delicious." In fact, I feel that the anticipation built from the wait adds to the special experience of dining here.The menu consists of courses only. Each dish is thoughtfully crafted, showcasing not only the quality of the ingredients but also the combinations, temperatures, textures, and balance of flavors. Rather than simply impressing with flashy ingredients, the dishes convince you through their overall excellence. Every visit brings new discoveries, and even on my fifth visit, I never feel bored.What impresses me the most is that, despite the difficulty in making reservations, I still find myself wanting to return. The challenge of securing a reservation isn’t the value itself; rather, once you experience the meal, you understand why it’s so hard to book a table. That’s significant.For me, this isn’t just a restaurant I visit when I can get a reservation; it’s a place where I always want to have my next reservation lined up. Even right after finishing my meal, I find myself thinking about my next visit.4.8. It's been a few years since my last visit.I made a reservation to celebrate a special occasion.Each course features unique dishes that are thoughtfully crafted. I didn’t ask how often the menu changes, but the level of care put into the food is clearly above the everyday dining experience, making it a truly special restaurant.The restaurant is located underground, with the second basement level serving as a bar and waiting area, while the dining area is on the first basement level.As it’s stated that guests must be high school age or older, neither the customers nor the staff are overly formal, yet the atmosphere is distinctly different from that of a casual eatery.The first dish was duck liver pâté, rich in flavor.The second dish featured Tokyo white mold cheese, which had no strong milk flavor and concentrated only on the delicious aspects of the cheese, accompanied by olive oil from Shodoshima and tomato espuma.When I asked why the espuma was transparent despite being made from tomatoes, I learned that they only used the parts of the tomato that lack redness, such as the flesh and juice. It seems there’s chemistry behind the cooking.As I enjoyed the meal, I observed the other guests and reflected on the past, making for a meaningful time.The matcha I had at the end was exceptionally delicious.It was a great meal. Shoyu soup uses chicken and niboshi, paired with medium-thick straight noodles. Pork chashu, nori, komatsuna, menma, negi and wontons. Hotate Shio Butter Aedama noodles on the side.

🇹🇭 Sra Bua ห้องอาหารไทยหนึ่งเดียวใน @siamkempinski กลับมาในเวอร์ชั่นใหม่ ภายใต้คอนเซปต์ Thai Biodiversity Fine Dining โดยเชฟ @num_weerawat และบอกเลยว่า ต่างจาก Sra Bua ที่เคยรู้จักอย่างสิ้นเชิง !!

ครั้งนี้เชฟหยิบเอาคอนเซปท์ Modern Thai วัตถุดิบท้องถิ่นตามฤดูกาล และความหลากหลายของวัตถุดิบไทย มาร้อยเรียงใหม่ โดยเกือบ 100% ของวัตถุดิบที่ใช้เป็นของไทย รวมไปถึงผักจาก Urban Garden ที่ทางร้านปลูกเอง และของหมักดองที่เชฟทำเอง

อีกหนึ่งสิ่งที่ชอบมากคือที่ร้านมีข้าวไทย ถึง 30 สายพันธุ์ 🍚 แต่ไม่ได้เสิร์ฟทั้ง 30 สายพันธุ์ในวันเดียวนะ แต่ละวันเชฟจะเลือกมา 3 สายพันธุ์แบบที่เราเองก็ไม่รู้ว่าจะได้อะไร จนกว่าจะยกมาเสิร์ฟตรงหน้า

รอบนี้ได้ลอง พญาลืมแกง ข้าวอูที่มี texture คล้ายข้าวเหนียว และข้าวม่วง ซึ่งพอได้กินอย่างละนิด ความแตกต่างของ texture และ character ของข้าวแต่ละชนิดทำให้มื้อนี้สนุกขึ้นเยอะเลย เหมือนมีเซอร์ไพร์สเล็กๆอยู่บนโต๊ะ

3 จานที่ชอบมากเป็นพิเศษในมื้อนี้คือ
Land & Sea - ตัวแทนความอุดมสมบูรณ์ของทั้งท้องทุ่งและท้องทะเล มาในรูปของขนมปังไข่ผำกับอ่องปูนา เป็นคำเล็กๆที่ทั้งรสชาติและ concept น่าสนใจมาก

Eggplant & Cucumber
ยำมะเขือยาวที่ซ่อนปลาหมึกไว้ด้านใน เสิร์ฟกับ egg yolk sauce และน้ำยำแตงกวาเมล่อน เป็นจานที่สดชื่น มีหลาย texture จนอยากจะขอเพิ่มหลายๆคำ 😆

Main Course ที่รวมทั้งปลากะมงพร้าวในแกงคั่วส้ม, Bok Choy ผัดกะปิ, ยำแตงโมดอกดาหลา และน้ำพริกตะไคร้ห่อไข่ เสิร์ฟพร้อมข้าว 3 สายพันธุ์บนจานที่ออกแบบให้เหมือน landscape ที่มีทั้งพื้นที่สูงและต่ำ เหมือนยกภูมิประเทศของไทยมาไว้บนโต๊ะ

โดยรวมมื้อนี้รู้สึกว่า Sra Bua เวอร์ชั่นใหม่สดใหม่และสนุกมาก ที่สำคัญคือทำให้รู้สึกว่าอาหารไทยที่เราคุ้นเคย ยังสามารถถูกเล่าในมุมใหม่ๆได้อีกเยอะทีเดียว ส่วนตัวประทับใจกับทิศทางใหม่ของร้านสุดๆ และอยากเชียร์ให้ทุกคนมาลองจริงๆ ถ้าเคยรู้จัก Sra Bua มาก่อน รอบนี้ยิ่งต้องกลับมา แต่ถ้ายังไม่เคยลอง นี่แหละคือเวลาที่จะได้รู้จัก Sra Bua ในเวอร์ชั่นใหม่ 💚
