Innovative, Japanese Cuisine
Foodle Reviews
This is my second visit since February. The course is a delightful fusion of Japanese cuisine and innovative dishes. Among today's offerings, the horse sashimi was exceptional—truly the best from the region known for it in Japan. The udon in edamame soup was also great. I can see why reservations are hard to come by. Today's sugar art was a peach, and it was impressively lifelike. It was a great meal!

Dining at Narayamachi Ao in HakataTabelog Rating: 4.38 Tabelog Award 2026 Silver Selected as one of Tabelog's Top 100 Innovative Restaurants 2025- Black Bun A classic dish at Narayamachi Ao. Inside, you'll find a rich filling made of pig's trotters, foie gras, and truffles. It's served piping hot, and the intense flavor left my companions amazed.- Nagaimo Somen On a lotus leaf, there's a layer of water shield. Underneath, long yam is shaped like somen noodles. You pour the water shield over it to eat. These super thin yam noodles are incredibly crunchy and refreshing, making them easy to devour.- Ayu Spring Roll The filling is a paste made from the head, innards, and bones of ayu, cooked in white wine consomme. This rich spring roll uses the entire fish, making it a perfect dish for ayu lovers like me.- Corn Mousse Topped with fruit tomatoes and zucchini. The transparent jelly is made from tomato juice, creating a tomato tea jelly. The sweet corn mousse and the acidity of the tomato blend beautifully, leaving a refreshing taste in your mouth.- Hamo and Fried Eggplant from Aoshima, Nagasaki The consomme is made from hamo broth. The gelatinous flavor of the skin is outstanding. The fried eggplant is cut in a cross pattern for easy eating and is very delicious.- Kurume Horse Meat Thinly sliced from the outside skirt, topped with chilled ginger sauce. The sweetness of the meat stands out, and it’s so good you could eat it endlessly. My companions finished it in no time, almost as if they were swallowing it whole.- Black Abalone from Karatsu and Kumamoto's Shiitake Mushrooms, served as a rice porridge This dish is simply outstanding. The flavor of sansho pepper is rich and intense. It's incredibly delicious, and I wanted a second helping.- Salmon Roe Peking Duck Style Lightly marinated salmon roe with asparagus, wrapped in a rice flour crepe with herbs from Kubota Farm. The juicy, melting flavor of the salmon roe is irresistible.- Udon from Nagao Seimen in Ukiha topped with purple sea urchin from Aijima Drizzled with a sauce made from just edamame, water, and salt. The sweet purple sea urchin and edamame sauce cling perfectly to the thin udon, making it exceptionally tasty.- Nozaki Beef from Kagoshima Grilled tenderloin over onions cooked in sukiyaki sauce. Served with a sauce made from the sukiyaki broth, red wine, and consomme, along with a soft-boiled egg. It’s like a sukiyaki steak, with a gentle umami flavor that makes it easy to finish.- Hairy Crab Spice Curry One bite spreads the rich flavor of hairy crab throughout your mouth in this spicy curry. Of course, I wanted a second helping.- Cherry A cherry made from special candy art. When you lightly tap it with the back of a spoon, cherry mousse comes out. It’s paired with rare cheese ice cream.- Water-like Mizu Yokan It’s indeed clear like water, leaving a refreshing taste in your mouth. It was a great meal. My companions were also enchanted by the wonderful dishes. I look forward to visiting again.I’m grateful to the owner for seeing us off until we were out of sight. Less

I appreciated this thoughtful gesture.Udon noodles from Ukihashi City topped with sea urchin.Tenderloin seasoned like sukiyaki.Spicy crab curry. Two of the cherries were real, while the other one was a candy sculpture resembling a cherry, filled with mousse.Water-like yokan (a jelly dessert). I was amazed by the rich yet not overwhelming flavor of the broth, packed with umami. After that, I enjoyed unique dishes like yam noodles, conger eel, horse sashimi, sea urchin, and tenderloin. Each dish was a creative experience, and I felt a sense of excitement about food that I hadn't felt in a long time.Although it's hard to get a reservation, I definitely want to come back next year. A popular innovative restaurant in Fukuoka.I had the opportunity to visit again in a short period of time. The dish featuring a mousse made from new onions paired with olive oil was delicious, with a smooth texture that captured the essence of the onions. Each dish was creative yet not overly extravagant, resulting in a well-balanced course.I would love to visit again if the opportunity arises.

I had the pleasure of visiting the renowned Narayamachi Ao in Fukuoka, and I sincerely thank you for inviting me to such a precious seat! It’s no exaggeration to say that this counter restaurant is well-known among food enthusiasts, representing Fukuoka. It’s also recognized as a difficult reservation spot, attracting many visitors from outside the prefecture.First and foremost, I would like to express my heartfelt gratitude for accommodating my allergy concerns on such short notice. The meticulous care and flexible response demonstrated the restaurant's sincere attitude and high level of hospitality. I believe this sense of reassurance is one of the reasons why it has been loved by many for years. The interior is sophisticated yet warm, exuding a dignified atmosphere. At the lively counter seats, you can enjoy the process of the dishes being prepared right in front of you, naturally heightening your anticipation. Each movement of the chefs is beautiful, making it feel like you are watching a performance. The cuisine here is an innovative style that skillfully merges the delicacy of Japanese cuisine with French techniques. It offers a unique perspective that cannot simply be described as "Japanese-French." Each dish tells a story while maximizing the quality of the ingredients, incorporating elements of surprise and playfulness. The expression of seasonal flavors is truly remarkable. While focusing on seasonal ingredients, the combinations of temperature, aroma, and texture are meticulously calculated, leading to new discoveries with every bite. By valuing the "aesthetic of subtraction" in Japanese cuisine and layering in French techniques such as sauces and cooking methods, each dish is elevated to something you can only experience here. What stood out to me was the approach to the ingredients. Rather than just using high-end ingredients for show, they carefully highlight the points where each ingredient shines, providing depth that goes beyond mere flashiness. Each dish leaves a beautiful aftertaste, lingering in my memory long after the meal. Moreover, there is a sense of unity in the use of tableware and the overall ambiance, contributing to a high level of completion in the "dining experience." This restaurant not only serves exquisite food but also allows you to enjoy the very passage of time in that space.Fukuoka boasts many wonderful dining establishments, but this one stands out as truly unique. Whether for a special occasion or for those wanting to experience Fukuoka's gastronomy, I highly recommend visiting this remarkable restaurant.Once again, thank you for the wonderful dishes and warm hospitality. I look forward to visiting again. I will do my best to make a reservation! It was a great meal! Less

Fukuoka’s「Narayamachi AOdo」 is considered one of Japan’s most coveted dining destinations — with seats typically filled by regulars years in advance and honored with consecutive Tabelog Silver awards.
Owner-chef Hideyuki Kaneda developed his culinary career across a range of acclaimed restaurants in Japan and abroad. After early formative experience in French cuisine, he expanded his international perspective through a research travel in Europe, as well as staging at 「Gaggan」in Bangkok. Returning to Japan, Kaneda spent approximately five years at the three-Michelin-starred「Ryugin」, where he refined his technical precision and contemporary Japanese sensibility. He later joined「La Maison de la Nature Goh」in Fukuoka before opening「Narayamachi AO」in 2019.
At 「Narayamachi AO」 , chef Kaneda showcases his genre-transcending progressive Japanese cuisine, blending refined Japanese sensibility with the clarity and structure of French technique along with his global vision. Signature creations include his celebrated crab curry inspired by his experience at「Gaggan」and a refined dessert shaped during his years at 「Ryugin」. It’s one of the places I am sure I will keep going back.
