Wow, it was delicious! ✨All the fish had a firm texture and a hint of sweetness.This time I went alcohol-free, but it would have been even better with some drinks.The chef was super friendly, and we had a great conversation about common interests.It's not easy to get a reservation, but if you manage to, consider yourself lucky! ✌️I highly recommend it!

This restaurant is a bit of a journey, requiring a taxi ride from Matsuyama Station or Imabari Station, and it’s truly in the middle of nowhere! Akase-san's tamago is pretty unique. Shari is mixed with egg yolk, and then stuffed into dashimaki. It's sweet! After the first bite, nori is offered to add a different texture.

More posting on Akakichi after a long delay. Does anybody even look at posts anymore? According to Instagram, they get seen by less than 20% of my followers. If tabelog is any guide, every meal at Akakichi begins with fried tenjikudai, striped thumb-sized fish. This reminded me of tiny fried smelt that might come as an appetizer in Greece or southern Italy. Perfect with beer.

The day's ingredients are presented before serving. A couple notable observations:
- At many sushiya, all fish are cleaned, broken down and filleted for serving hours or maybe even days before service. Here, the smallest fish have been prepped but not fully de-boned. The larger ones have simply been de-scaled.

日本一の漁師と呼び声も高い藤本純一さんと、東京 西麻布の名店『蒼』の峯村シェフがタッグを組んだポップアップレストラン『虹吉』さんに伺いました。

なので、贅沢な事に料理に使う魚介は全て藤本さんのものです。
一流レストランが、どこでも欲しがる藤本さんの魚を、思う存分頂けるので何とも贅沢なレストランです。

アクセスは、今治市の北部から本州にかけて、いくつかの島が点在する場所があり、そこの『伯方島』の北端に位置します。
この日は、福山駅よりより車で伺いましたが、約1時間10分程で着きました。

料理は、どれも美味しくて外れが一つもありませんでした。素晴らしかったです。
