I hosted a dinner featuring a line up of all red wines, so I asked Chef Agustin to create a menu to go with the wines.
Always happy with a meal here, and the wine service from Carlito tonight was impeccable.

Invited to try the latest menu after a few months of being away.
The fideuá is always a good idea, and today it was made with mushrooms and came with tons of truffle shaved on top. Difficult not to like.
The kinki was pretty nicely done, and the caldoso rice with carabinero is a sure winner.

The latest menu at @ando.hkg is brimming with new dishes and new table-side presentations. The restaurant is constantly evolving - even staples such as the bread course and the Caldoso rice have been changed up. As usual, every dish was great but my favorite this time was the cold corn soup with shaved karasumi and caviar which is perfect for the summer heat!

The latest menu at @ando.hkg is brimming with new dishes and new table-side presentations. The restaurant is constantly evolving - even staples such as the bread course and the Caldoso rice have been changed up. As usual, every dish was great but my favorite this time was the cold corn soup with shaved karasumi and caviar which is perfect for the summer heat!

It was a fun night with happy chefs at the @ando.hkg x @respiracion_japan collaboration - part of Ando’s 4th anniversary celebrations! Located in Kanazawa and founded by a trio of friends, 2* Respiracion is a modern Spanish restaurant which features Ishikawa’s ingredients and unique terroir. Since both restaurants specialize in Spanish cuisine using Japanese ingredients, the menu seamlessly blended the chefs’ styles and flavors - weaving from the signature Amaebi of Respiracion... More

A last-minute change from a red wine-focused dinner probably meant some substitution in the dishes, but we still got a few that would have worked very well with red wine.
Standout dishe were the braised tripe with trotter tendons, and the mikan dessert.
