Every year, I go on a selfish tour with my friends, visiting the same restaurant at the same time. I was surprised to find that the menu at this yakiniku place was almost completely different from last year. The only items that were the same were the tenderloin sandwich and the curry...This year's highlight was the honeycomb tripe. Typically, only one counter is used, and the two-hour omakase yakiniku course is served one dish at a time with full attention. Most of the dishes are yakiniku, and the owner is skilled at explaining and engaging with guests, making it enjoyable to watch the grilling right in front of you. The cooking method varies by cut, ensuring that the meat is always delicious—definitely better than grilling it yourself.The quality of the meat is excellent, so it doesn’t feel heavy, but with around 20 dishes served, even a single piece of meat adds up to a substantial amount, leaving you quite full by the end. If you drink a lot of beer, it might get a bit tough towards the end...There were reasonably priced wines available, so we shared a bottle and had two glasses each. The total bill came to about JPY 17,000 per person, which is incredibly affordable for the quality.I don’t usually eat much yakiniku, but I definitely want to return to this place. Hiroshima has many great restaurants, and I’d love to stay longer.It was a great meal.Today's Course (✅: Favorite)✅ Lightly Seared Sirloin Yukke with Yamanashi Egg The fat has a low melting point, and the meat itself is sweet, combining beautifully with the richness of the egg.✅ Blanched Omasum Soft omasum with zero odor, paired with sesame oil. The Hiroshima miso and fruit sauce complement it well. One of the best omasum dishes I’ve ever had.- Tongue with Kombu Kelp Sashimi The balance of tenderness and flavor is excellent. Is the delicious ginger soy sauce a family recipe?✅ Aged Sirloin Cap (50 days) Not just aged, but deeply flavorful sirloin cap. The meat, grilled slowly for about an hour, is tender and full of umami.- Chuck Eye Roll with Grated Daikon and Ponzu The cut has a strong meat flavor.- Beef Tongue Tip with Salt Grilled on one side and lightly seared on the other, offering a delightful contrast in texture.✅ Flap Meat with Sauce Served in a small rice bowl with freshly cooked rice, it’s undeniably delicious.✅ Shoulder Was it always this tender? The red meat flavor is delightful.✅ Lamb Shin with Salt & Garlic Soy Sauce The main dish of the day, thick-cut and tender meat that is simply perfect.- Sirloin It looked marbled, but it wasn’t greasy at all. Served in a small bowl as well.- Lamb Shin Steak Sandwich The lamb shin from earlier was made into a sandwich, and it was exquisite as well.✅ Kombu, Bonito, and Beef Broth Miso Soup Hiroshima miso seems a bit sweeter? The broth is incredibly delicious.- Outside Skirt with Garlic Soy Sauce Starting with the horumon, the outside skirt is also tender.- Heart Crisp texture with no fat, giving it a refreshing feel.- Large Intestine Feels like a lot of fat has been trimmed, allowing you to enjoy the crunchy texture.✅ Abomasum Was abomasum always this tender? It has a nice bounce, but the texture is unlike any I’ve had before.✅ Beef Ginger Stir-fry I forgot to ask which cut this was... served in a small bowl.- Honeycomb Tripe Also completely odorless and tender.- Curry to Finish I was full, so I had a smaller portion of rice. I think it would be safer to avoid ordering mixers.--- Course Details Below ---◯ Omasum This dish featured boiled omasum served with a slightly spicy miso from Hiroshima. There was no unpleasant odor, and the quality of the ingredients was evident.◯ Heart Seasoned with sesame oil and served with salt. It had no bloody taste and a crisp texture, making it very enjoyable.After the assistant suggested ginger soy sauce, the owner recommended salt instead. Given the rarity of this meat in the course, this mix-up felt critical.◯ Tongue Served with kombu-kelp cured tongue and ginger soy sauce. It had a sweetness and was also free of any strong flavors.◯ Strip Loin Served with a sauce that seemed to be soy-based. The sauce had a nice roasted flavor that paired well with rice.◯ Lamb Shin A robust red meat served with garlic soy sauce.◯ Sirloin Cap Served grilled with yuzu pepper. Although it is said to be close to lamb shin, it had a noticeable fat content.◯ Outside Skirt I was told to enjoy it as is, but it was well-seasoned with salt sauce and had a crunchy texture, making it perhaps the best dish of the day.◯ Shoulder Served with a sauce reminiscent of ginger pork. The shoulder is a strong red meat cut, but the seasoning made me want to try the fattier parts as well.◯ Gukbap This was a gukbap made with beef bone, kombu, and bonito broth.◯ Ribeye This was the fattiest meat served that day. Even so, I enjoyed it dipped in ponzu for a refreshing taste.◯ Liver → Top Sirloin Change I requested a change from liver to top sirloin due to my dislike for liver, but it seemed to be a recommended dish. If you enjoy it, definitely give it a try.However, when I made the reservation, I clearly stated my aversion to liver. I wonder what that confirmation was for...◯ Large Intestine The large intestine was served focusing on the intestinal wall. I believe the lack of strong flavors and odors in the offal is a strong point of this restaurant.◯ Tongue Steak & Tongue Tip The tongue steak was served with salt, while the tongue tip was served with sauce. I preferred the tongue tip for its pleasant crunchy texture.◯ Final Dish I was served curry and beef bone soup. The curry was said to be a normal size for 3-4 bites, but it had quite a lot of sauce, which felt a bit unbalanced. Previously, I had it grilled until crispy, but this time I could enjoy the crunchiness! Though it’s part of the tongue, it has a completely different flavor from the tongue base or middle.【Photo 25 & 26】Grilled Sukiyaki Ribeye - ☆Sweet, finely textured, and fluffy tenderness! Mixed with rich egg yolk, it’s perfect on rice! A fitting dish to end the grilling!【Photo 27】Sakakiyama Beef Curry - ○A rich beef curry made from the meat's broth! It feels heavy towards the end, but it’s so delicious that I managed to finish it!【Photo 28】Watermelon - ○For dessert, instead of the usual white wine jelly, I got a large cut of watermelon! After all that meat, biting into the juicy and sweet watermelon is delightful! It felt like it had a sugar content of 13!I have a low tolerance for fat, so normally I would have given up with this amount of regular meat, but the low melting point and smooth fat of Sakakiyama Beef made it easy to enjoy the entire course without feeling greasy! With an increased variety of sauces, the course has become diverse while maintaining a simple approach, and there was no overlap in flavors between different cuts!While the owner’s dazzling appearance is well-known, I feel that the true charm lies in his serious dedication to maximizing the potential of Sakakiyama Beef! This time, I was so looking forward to my long-awaited first visit that I decided on my return date only after confirming the reservation!There was a mix-up where my reservation was changed from 6 PM to 8 PM, but I was able to enter without any issues.The interior features two semi-circular counters surrounding the grill, which seem to operate in alternating shifts for the 6 PM and 8 PM reservations.However, when I was guided to my seat, the previous guests' plates had not been cleared, and they remained there until I left.It seems they are operating with limited staff, which may pose challenges, but I felt that if they could clear the space before seating guests, it would create a more pleasant dining experience.◆ Ordered Course・Omakase Course (JPY 11,000)There is only one course available for JPY 11,000. It was very well-balanced and had a satisfying volume.The dishes that particularly impressed me were as follows:* Heart with Kombu Kelp: This was the first dish served. The texture of the heart, enhanced by the umami of the kombu, was delightful and immediately captured my heart.* Blanched Omasum: It was incredibly fresh and had a wonderful bounce. The accompanying miso sauce was so delicious that it left me in awe. I had been curious about Wagyu Lab K in Hiroshima for a while. The owner cooked each piece of meat individually and explained their unique characteristics, allowing us to truly enjoy the flavors of the meat. The outside skirt, in particular, was incredibly flavorful, bursting with umami with every bite—it was a level of taste I had never experienced before, and I was truly amazed. I look forward to visiting again with my partner the next time I return to Hiroshima.
The meat is simply delicious! They grill each piece right in front of you, and the staff is not only handsome but also down-to-earth and entertaining. It was an amazing experience. I was reminded just how tasty beef can be. It's hard to get a reservation, but I will definitely come back!

From the very first dish, the Yukhoe, I was captivated. Every cut of meat had an irresistible sweetness and tenderness. I wonder if I will ever encounter meat this delicious again. The freshly steamed rice was also fantastic, and I could eat as much as I wanted—just perfect. With a bowl in my left hand and a drink in my right, I felt truly happy. I am grateful for the wonderful service I received from the moment I entered until I left. It was definitely worth the trip to Hiroshima.

Thank you very much!Here’s what I had that day, along with some thoughts:All the beef served is Sakakiyama beef, which has been raised for over 32 months (974 days), longer than the usual black-haired Wagyu by more than three months. This results in a rich flavor in the meat, setting it apart from simply fatty black-haired Wagyu. Personally, I value flavor over fat!I was extremely satisfied to enjoy such a variety of cuts.
