I had been curious about Wagyu Lab K in Hiroshima for a while. The owner cooked each piece of meat individually and explained their unique characteristics, allowing us to truly enjoy the flavors of the meat. The outside skirt, in particular, was incredibly flavorful, bursting with umami with every bite—it was a level of taste I had never experienced before, and I was truly amazed. I look forward to visiting again with my partner the next time I return to Hiroshima.
