Sakakiyama beef refers to female, non-calving cattle, and even if it’s not a branded beef, it can still be delicious, especially if it has good lineage. They serve three dishes as sashimi, featuring easily recognizable cuts like Beef Tongue and Outside Skirt, both of which are quite tasty. The other dishes are also reasonably good.
