Doubek - The Theatre of Fire 🔥

I discovered @restaurant_doubek led by @stefandbk and @selina_nora in September last year - and was literally set on fire and blown away 🔥 🤯

A small basement in Vienna’s 8th district with only 6 tables provided me with one of my greatest culinary experiences. I had no clue what happened, but to me it was clear this was ⭐️⭐️⭐️restaurant already. My revisit in January 2026 only confirmed what I already knew.

To me, Doubek is defined by three P’s:
Product
Precision
Passion

And maybe a fourth P - Perfection.

Every dish is full of emotion and power. Often seemingly simple dishes with only one or two components reveal an ocean of complexity and creativity, like teardrop peas with a dashi beurre blanc which is one of the best servings of my life.

Every detail matters, completely obsessed - whether picking the right tableware or having Nora’s mother sew the holders for their special made chopsticks or their herb butter which is delicately placed by one person to maintain consistency - each individual leaf and sprout places in the butter 🌿 🧈

And yet what’s most striking is that they say: “each time before service, we have so many ideas - and we never execute all of them” which has virtually been impossible for me understand - because what they deliver is perfection. From folding the toilet paper in the shape of Chef Doubek’s fan 🪭, to showcasing the 50+ citrus varieties they grow on their rooftop overlooking Vienna 🍋 - this is a couple destined for the stars ✨

But what’s most special is not the restaurant or the magical experience which you will never forget - what’s most special is them:
Nora and Stefan.

They are some of the most genuine, passionate and kind people I have ever met and they deserve all the best in the world and I am proud to call them friends.

Without a doubt one of the best restaurants in Europe, if not the world at the moment. So go to Vienna and thank me later, or coincidentally @restaurant_doubek will be doing a one month residency on my home turf jn Copenhagen at @thepagoda_tivoli from the 13 June till 11 July.

🇯🇵 Kisara เค้าทำเรื่องอีกแล้ว รอบนี้คือโดนใจสายล็อบสเตอร์แบบเต็มๆ เพราะเค้าออกคอร์ส Lobster Omakase ใหม่ แล้วไม่ใช่แค่ใส่มาเป็นกิมมิกนะ แต่มาแบบเต็มปากเต็มคำทุกจานจริงๆ 🦞

เป็น Boston Lobster ทั้งคอร์ส 10 จานที่รู้สึกได้เลยว่าเค้าไม่ได้กั๊กของเลยสักนิด ใครที่ปกติชอบกินล็อบสเตอร์อยู่แล้วจะเข้าใจฟีลนี้มาก คือมันฟินตั้งแต่คำแรกยันคำสุดท้ายแบบไม่ต้องลุ้นว่าจะมีจานไหนไม่ใช่ล็อบสเตอร์ เพราะไม่มี !!

ที่ชอบอีกอย่างคือความสด เชฟบอกเลยว่าของเข้าทุกวันศุกร์ แล้วคอร์สนี้ก็เปิดเฉพาะวันศุกร์กับเสาร์เท่านั้น ตอนเชฟยกมาให้ดูคือยังขยับอยู่จริงๆ แบบเห็นแล้วรู้เลยว่าวันนี้แฮปปี้แน่นอน

ส่วนตัวคอร์สนี้คือถูกใจมาก เพราะเป็นคนที่เลิฟ lobster อยู่แล้ว แล้วการได้กินในหลายๆรูปแบบแบบนี้ มันสนุกกว่าที่คิดเยอะเลย แต่ละจานมีดีเทลและรสชาติแตกต่างกันไป

ใครเป็นสายนี้เหมือนกัน บอกเลยว่าห้ามพลาดจริงๆ คอร์สนี้ดีแบบไม่ต้องพูดเยอะ ให้รูปเล่าเรื่องดีกว่า ส่วน lobster sashimi กับ pasta สองรูปท้าย อันนั้นคือสั่งเพิ่มเองนะ ในเมื่อมาแล้วก็ขอจัดให้สุดไปเลย จะได้ไม่ค้างคาใจทีหลัง 😆

〜1.スナップエンドウのカルドソ

スナップの鞘だけでスープを作り
そのスープをコトコト煮立てた後
お米を大人しく含ませて炊き上げ
春風味豊かなリゾット風に仕上げ
お米が炊き上がって来たところへ
仕上げとしてスナップエンドウを
投入し乍らスペイン風リゾットの
カルドソを完成させております。

スナップエンドウの鞘は時間かけ
その出汁を丁寧に取られてますが
スナップエンドウの豆粒としては
少し短時間で炊くだけとの事です。

カルドソを炊き上げる鉄鍋自体も
オジャ鍋と言うスペイン産鉄器で
炊き上げており東氏の拘りの器で
一品に対する熱情を感じます。

お料理の方は和食で言うおじやの
様な食感が漂うスープリゾットの
様相を呈しててお出汁のうま味が
良く引き出されている一品料理。

2.ポカディージョ：小肌と大葉

東シェフ定番のヒトサラとなります。

・ビネガーで締めた小鰭 天草
・おかひじき
・トマトを練り込んだパン
・大葉

元来、ボカディージョと言いますと
サンドイッチ風スペイン料理ですが
東シェフ率いるアカにおけるものは
捻りを効かせたポカディージョにて
特にパンに上乗せするお魚は鰯では
無く和食の代名詞的な海の幸である
小鰭を使用されております。
この辺が舌を唸らせる匠の技が冴え
東氏の料理センスがキラリ光ります。

トマトを練り込んだトマトパンの上に
小鰭をビネガーでマリネしたものにて
ご用意されております。
更にこのポカディージョを大葉で包み
香り付けを同時に施し小鰭との味覚の
距離を控えめにさせ舌と触れ合う時の
間合いを自然に香味が打ち解ける様な
仕草に仕上げており正に絶妙な肉感と
旨みの調和に舌が翻弄されっぱなしと
なっておりました。

その一口目で衝撃的な味覚ウェーブが
沸き起こってファーストコンタクトの
歯触りからサクサク食感のパン生地に
フレッシュに締まる小鰭の酸味に加え
大葉の爽やかで上品な香りとが交差し
絶妙な味わいへと昇華しております。

小鰭はビネガーと塩で均等に1時間ずつ
締めててシャープさとと歯切れの良さを
両立させる肉感に仕上げ小鰭の持ち味を
抜群に引き出しております。
鮨店とは又別格の異次元な食感と味覚を
兼ね備えた素晴らしい小鰭の完成度にも
舌が驚嘆する一品となっております。
その驚嘆を禁じ得ない小鰭が贅沢な事に
3切れも重ねられてり圧巻の形相を見せ
小鰭で覆い尽くされたポカディージョは
中のパンがほぼ隠されてしまう程身厚で
重厚な層を形成しており大勢の料理人が
誠に丹精を込めてるお料理であることが
瞼に焼きつく姿態を見せております。

3.金目鯛の薪火焼き 外房

鱗を付けたまま薪火で焼き上げた金目鯛に
12種類のハーブを盛り付け行者大蒜添えて
金目鯛の持ち味を引き締める為ビネガーを
皮目の上から滴らせキュッと身質に活力を
滾らせる東流の大海の幸に対するあしらい。

金目を焼いた直後にビネガーを最初に滴め
酸味で麗しく染めてその上にハーブ香味を
纏わせ可愛らしい黄色の花弁を添え美観を
整えており一目惚れする程の可憐な装いに
うっとり見つめてしまいました。

芳醇なる香味を振りまく多彩なハーブと共に
鱗には薪の香りが付いてる金目鯛の薪焼きの
肉片を一口齧りますと鮮烈なる鱗の破砕感が
先走り次いで皮目の芳ばしい苦味が舞い上り
金目の白身に行きつかない内の歯触りだけで
強烈なインパクトを発する食感と味わいとの
共演に口内が興奮してしまいます。
そして山盛りのハーブから瑞々しい繊維感が
伴う香味が金目鯛をオブラートして脂質感を
物の見事に宥めており金目の膨よかさと緑の
清々しさが共鳴し合いつつ美味が奏でられて
口内で弾ける金目の肉感と脂質から官能的な
味覚が花開き誠に舌を翻弄する味わいに塗れ
メロメロになっちまうのです。

4.稚鮎のフリット:琵琶湖

・セモリナ粉
・マンチェゴチーズ掛け
・木の芽の香り付け
・シェリーワインビネガーを飛ばして

早くも琵琶湖から稚鮎料理のご登場に
心躍りワクワク感が止まらず眼の前の
稚鮎フリットの華麗な衣の舞に期待が
めちゃ広がりを見せて興奮気味に舌も
お口も欲望が募る感じとなっています。
その勇姿にも見惚れつつも稚鮎の中は
どんな感じに仕上がってるのか興味が
唆られて全くこの稚鮎の可憐なお姿と
あとで思い知らされる妙味珍味に舌が
翻弄されちまう事となり慌てふためく
と言う感じの結果が目に見える様です。

稚鮎調理を遠目に眺めてますと揚げた後
直ぐシェリービネガーを稚鮎フリットに
滴らせて木の芽を添えつつその稚鮎上に
マンチェゴのパウダーチーズを散らして
完成させて麗しい美観を整えております。

而して稚鮎のフリットは3段積みと言う
重厚感が迫って来る3層構造のヒトサラ
マンチェゴチーズの頂上までの聳え立つ
勇姿は威風堂々たる一品料理となってて
誠に惚れ惚れしちゃいます。

The Grey Stone Fine Food and Spirits (@thegreystone_newtown) is a chef-driven restaurant in Bucks County led by Chef Rob McNally (@chef_robert_mcnally) with a seasonal menu focused on fresh local ingredients, elevated seafood, handmade pastas, and refined comfort food.

From the pasta to the whole branzino, soft shell crab, and dessert, every dish felt thoughtful, balanced, and incredibly well executed.

A huge thank you to Chef Rob McNally and The Grey Stone team for having me and my group in for such a great experience.
