At Bar School we were made to listen to recordings of ourselves failing.

No praise. No participation trophies. Just a room full of people explaining what needed fixing.

It steels you. It was also one of the most useful things I’ve ever done. There is good reason, supported by research, why that approach not only works but often prepares people better for success.

Years later, I found myself thinking about that while eating dinner at The Devonshire, one of London’s most celebrated restaurants and arguably the city’s most talked-about pub.

Not because The Devonshire is bad. Far from it.

But because I increasingly wonder what happens when a restaurant is praised so enthusiastically, and for so long, that criticism starts to feel impolite.

Does consensus eventually become truth?

Do we stop assessing a restaurant on its own merits and instead inherit the judgement of everyone who came before us?

In the Bay Area, anything can be a burrito, even Taiwanese fan tuan, sticky rice rolls packed with youtiao, pickles, pork floss and more. Local restaurants have taken to calling them "rice burritos."

Since I don’t want to pick just one dish from my meal at @osteriadimercato for my monthly roundup, here’s some of my favorites from a very tasty first visit. If you love properly al dente pasta, this is your spot.
1. Hanger steak au poivre
2. Scarpinocc with smoked ricotta and morels
3. Tuna crudo with apples
4. Foie gras with peach
5. Fettuccine with braised rabbit
6. Rigatoni bolognese
7. Citrus with fresh cream, olive oil, and sea salt

Recommended bowl: Established empire

Famed ramen shop with multiple branches and styles, both in Japan and overseas. The flagship in central Tokyo offers a soup containing pork, chicken, gyokai, kombu, vegetables and several other ingredients. Noodles are provided by Mikawaya Seimen, with different noodles for ramen and tsukemen. Both are recommended, however the tsukemen is probably the more popular choice. The recommended way of eating tsukemen is in thirds as follows: eat one third of the noodles the normal way by dipping them in the soup. Then squeeze the sudachi citrus over another third of the noodles. Finally, use the black shichimi spice powder on the counter for the remaining noodles. Original master Tsujita-san opened his first shop when he was just 24 years old. As of mid 2020, there are 17 Tsujita shops in Japan; 13 serve this style of menu, along with with three miso-themed shops and two tantanmen specialty shops. นอกจากนี้ยังมีเมนูจานร้อนที่สามารถสั่งได้ไม่อั้นตลอดมื้อทั้ง Lobster Thermidor, Oysters Rockefeller, Gratinated Alaskan Crab, Cajun-Spiced Tiger Prawns with Butter Sauce, Half-Shell Scallops with Herb Butter & Lemon และ Fish & Chips

แต่สิ่งที่ทำให้ประหลาดใจที่สุดกลับเป็นอาหารไทยในไลน์บุฟเฟต์อย่างแกงปูใบชะพลู คือมันดีมากกกก เนื้อปูใส่มาแบบไม่มีกั๊ก รสชาติเข้มข้นจัดจ้าน ส่วนปูอบวุ้นเส้นก็เสิร์ฟพร้อมก้ามปูชิ้นใหญ่แบบสะใจ ซีฟู้ดย่างสดๆก็ทำได้ดีทุกอย่าง และน้ำจิ้มซีฟู้ดก็มีมา 2 แบบ แซ่บถูกปากคนไทยสุดๆ ปิดท้ายด้วยไลน์ขนมหวานที่มีให้เลือกเยอะจนคนรักของหวานน่าจะมีความสุขไม่แพ้สายซีฟู้ด

ด้วยคุณภาพวัตถุดิบ ความหลากหลายของอาหาร วิวริมแม่น้ำเจ้าพระยา และการบริการในแบบ Mandarin Oriental ทำให้นี่คือบุฟเฟต์ซีฟู้ดที่คุ้มค่ากับราคามากจริงๆ
