Being trained alongside Sugita San for 9 years, Chef Hashimoto mastered all the quintessential techniques in terms of how to curate a balanced and consistent sushi omakase. The omakase course features a handful of simple yet delicious tsumamis, followed by 12-13 pieces of sizable nigiris. What consistently impressed me was the isobemaki that features different types of hikarimono, depending on seasonality. Another highlight was definitely the kuruma ebi which was sweet, al dente and cooked to perfection.

If you are a sake lover, you have to trust Chef Hashimoto’s selection as he offers a wide range of premium and rare sakes by the carafe at very reasonable prices. Reservation is relatively easy - I strongly recommend Sushi Hashimoto whenever you need a rather casual sushi lunch on Sunday.

Chef Arai has a one-of-a-kind CV that encompasses experience in both Kyubey [久兵衛] style and Sushi Sho [壽司匠] style. Right after graduating from culinary school, he began his sushi career at Kyubey, and eventually spent 8 years at this training ground. Then, he moved on to another discipline, Sushi Sho at Yotsuya, working alongside the master Chef Nakazawa who later left Japan for good, for another 6 years. Given such a special culinary background, it’s no surprise that customers would experience the unique styles of both disciplines. ⁣

Today, Sushi Arai’s main counter is almost impossible to book unless you’re a regular. I have encountered the very best shime-saba during my recent visit in Dec. He also serves a myriad of maguro cuts – if you are lucky enough, you may get 6 to 7 cuts of maguro, including some rate cuts like senaka [背中], hagashi [剥し] and chiai [血合]. ⁣The melt-in-your-mouth text and delicate sweetness of senaka was particularly worth-pondering.

If you follow me long enough, Yamazaki is the only restaurant that I visit every single time when I’m in Tokyo. It is one of the very few modern kappo restaurants which manages to integrate western cooking techniques in a well-conceived manner. Patrons are expected to encounter plenty of exotic ingredients as well like suppon, bear, wild boar and karasumi, especially in winter.

Another reason for me to visit Yamazaki frequently is Chef Yamazaki’s creativity. In my last trip in Dec, Chef Yamazaki curated a bold dish, featuring two rich and heavy ingredients - foie gras and unagi. To my surprise, the flavors worked so well with the balsamic sauce and grilled vege underneath. The surface of the unagi was crispy, and the meat was perfectly grilled into a flaky texture. Let’s not forget the wine selection curated by Chef Yamazaki who’s also a qualified sommelier. ⁣The Church Road Chardonnay is one of the best entry-level wines I have ever tasted.

As a tradition here, the meal always finishes with a show-stopping homemade gelato, topped with 18yo Yamazaki whisky. Till next time, Yamazaki San!

Eman is a word from the Basque region, meaning to give and offer. In fact, Chef Kobayashi was trained at numerous basque restaurants, including the world-renowned Azurmendi. He subsequently returned to Tokyo and opened Eman in 2021, offering a unique take of Spanish cuisine with high-quality japanese ingredients.

I also recommend the wine pairing of Eman as Sommelier Harazono San did a great job in sharing humble yet unique wine in his wine pairing program which costs less than 10,000 yen.

My favorites dishes include kuruma ebi paella, grilled unagi with parmesan and iberico steak that comes with a phenomenal milky flavor. Reservation is predominately occupied by regular customers but a handful of seats and cancellation may be offered via tablecheck.
