麻布十番のメインストリートである雑式通り沿いに店を構える『麻布十番 きた福』さんに伺いました。

こちらは、蟹料理で人気の『きた福』さんの姉妹店です。
『きた福』さんと言えば『赤坂きた福』『銀座きた福』『新富きた福』さん、と既に3店舗有りますが、今回、4店舗目となる『麻布十番 きた福』さんがOPEN されました。

アクセスは、麻布十番駅より徒歩5分程です。

この日は、5kg UPの特大たらば蟹と1,1kg UPの特大毛蟹料理を堪能しました。

The most reliable thing about dining at Robuchon is the bread. Early in the meal, a chariot, paneled in the kind of lacquered wood you’d find inside expensive yachts, is wheeled over with a dozen breads (baguettes, brioches, rolls in pastel hues), which servers pick as you point or pine.

Not all of bread at Robuchon Au Dome is worth their fill, but they reflect a consistency that outlives Robuchon. My first taste of his cooking — Paris, late 2000’s — was extraordinary, and though few others measured up, it’s unfair to play that card. Because unless you’ve dined at Jamin (I haven’t), the satellites probably never dipped below Michelin-level quality — except in Hong Kong, where it did. Robuchon Singapore struggled with location; Tokyo held impossible standards; London’s Michelin grip kept things tight; New York flitted between okay and great; and no one could complain about Taipei’s Robuchon, given the prices.

Yes, the pommes puree varied (gummy here, gamey there), but the disc of caviar still floats on exactly 72 dots of cauliflower cream. Servers still rush to pull your chair as soon as you glance at the restroom. Service at Dome, as with other Robuchons, is telepathic and balletic. But it’s also among the chummiest.

It lets your guard down, so you forget that food here isn’t what it was when Robuchon Galera was the greatest French restaurant in Asia. That the leather binding of the glorious 17,800-label wine list is starting to fray. And that the scratches on once-pristine china show when midday light hits through that glass dome.

Consider the beetroot — still wincingly sweet on a 3rd visit. Or the morels, which ate limp. The Comte cheese ravioli, which lacked punch, and the parsley oil, imparting little beyond color. Stuffed pigeon and foie-gras tested the limits of sourcing — unclear if it was even a Brittany breed (irony meat, unevenly cooked). And while the white asparagus was sweet and meltingly soft, the dish isn’t emblematic of 3*.

The live piano, though, might be. At times it swells from ‘90s lobby tunes into a soundtrack fit for the climax of a Korean drama, where the protagonist, wallowing in regret, finally repents. There’s still hope. Less

Jeg hadde hørt rykter om at Kiwi skulle etablere seg i det krysset, men naboene protesterte fordi de var bekymret for at det visuelle ikke skulle matche nabolaget, så det endte med to restauranter i stedet – en italiensk på den ene siden og en biffrestaurant på den andre siden! Det beste utfallet av saken, vil jeg si!

Prisene var vel egentlig som forventet – alt er dyrt på Frogner. Biffen som jeg nevnte i videoen, var dessverre litt gummiaktig, sånt skjer! Lite hyggelig for både restauranten og meg som gjest. Hvordan var deres opplevelse? Stem gjerne under.

Forrettene var fantastiske! Oksehalesuppen var ekstremt rik og fyldig, med kraftig kjøttsmak. Det var små biter av mørt kjøtt, lever og myk purreløk. De tyske aspargesene var perfekt kokte – myke, men ikke for myke! De ble servert med en flott, tykk hollandaise-saus som ikke lot seg renne av aspargesene - sånn skal det være. Vanligvis synes jeg asparges blir for myke, men hasselnøttene var et genialt triks for å løfte retten! Noterer!

Kamskjell- og reketoasten var en suksess som bare det! To biter med kamskjell og enda flere reker ble servert på en elegant, liten sprø brioche-toast med to emulsjoner og en sitrusgele. Alt harmonerte i munnen!

De hjemmelagde friesene var noe av det beste jeg har smakt i Oslo! Sprø på utsiden, myke på innsiden, og fritert med skallet på. Sausen får også toppkarakter! Store pepperkorn og intens smak.

Nybakt, tynt og saftig brød med gylne og knasende kanter, altså.. Det er en nytelse i seg selv?! Men så kommer det flere dimensjoner! De krydrede og saltede pancettabitene smeltet godt inn i brødet, det tilførte deilig fedme og smak😍 I tillegg var det små biter av myk mortadella som jeg i utgangspunktet ikke la merke til, men som ga ekstra god smak! Fyllet bestod av en klassisk kombinasjon som lar brødet skinne; asiago ost, røkt prosciutto cotto, tomat og ruccola. Perfekt som en grab and go til lunsj eller etter jobb😍👌🏽

Intense seduction by a stream of umami cream. It’s all about the uninterrupted creamy texture.

The salami is embedded in the crust and it provides more flavor without distractions.

I honestly thought it was a marketing stunt and it’s a true masterpiece!
