I finally visited the restaurant I had been longing to try. The atmosphere, service, and food made for a truly wonderful experience.Several dishes left a lasting impression on me:- The classic Noen, featuring vegetables prepared in various ways such as raw, fermented, and fried, all bursting with vibrant flavors.- Corn- Bear Meat Cutlet with Winter Truffle- Eel- Sweetfish and Japanese Radish Rice- Tsushimi BreadFor dessert, I enjoyed an exquisite mango sushi.I look forward to visiting again!

Overwhelming! I want to shout that from the bottom of my heart! This is a supreme restaurant that everyone should visit at least once in their lifetime. The passion for cooking was evident in every single dish. The pairings were incredibly well-matched with the food, which was truly remarkable. I couldn't help but admire the skill and dedication of the chef who prepared all of this alone.

I visited TSUSHIMI in Yamanashi. The dishes made with 80 different types of vegetables were visually stunning and delicious, offering surprises and discoveries with each plate. The clay pot rice with sweetfish, as shown in the photo, was exceptionally fragrant and flavorful. The course meal maximized the potential of the ingredients, leaving me completely satisfied from start to finish. I definitely want to return in a different season.
