Sven Elverfeld schließt das @restaurant.aqua. Ein Lebenswerk endet überraschend, aber sehr bewusst. Während mein Grid geflutet wird von Ehrungen, Abschiedsgrüßen und Erinnerungen, denke ich an 2021, als Johannes King den Söl’ring Hof an @janphilipp_berner übergab. Ein sehr eleganter Wechsel ohne Festklammern (gerade ist Johannes übrigens für ein paar Tage mit seinen King Classics auf die Düne zurückgekehrt, aber das nur am Rande). Ich durfte den Wechsel damals eng kommunikativ begleiten. Seither beobachte ich: Zu viele Köche umklammern ihre Lebenswerke, wagen keine neuen Wege und tun sich schwer, den Nachwuchs in die erste Reihe zu schubsen. Das Vendôme zeigte es anders – Joachim Wissler machte Platz für @denniskuckuck_ . Generationenwechsel mit Haltung.
Elverfeld geht auf dem Höhepunkt. Nicht weil er muss, sondern weil er es kann. Es braucht vielleicht mehr Mut, ein Restaurant von Weltruf zu schließen als es weiterzuführen. Er hat Niedersachsen einen kulinarischen Anker auf Weltniveau gegeben. Dass er diesen nun selbst lichtet, mit erhobenem Haupt – das finde ich bemerkenswert.
Loslassen ist die Anerkennung, dass Lebenswerke enden dürfen, damit Neues beginnen kann. In diesem Sinne: Danke @sven.elverfeld und alles Liebe für den nächsten Schritt.🙏

An incredible lunch at Lana in Madrid. Voted #8 best steak restaurant in the world and what a selection they had. Lots of options here, but knew I was in good hands and told them to select their favourites. The Wagyu cecina was amazing, super soft and melting on the plate - this beef was so delicately sliced and translucent. Amazing flavour.

Ordered the grilled sweetbreads with caviar as a starter as recommended by Martin - what a dish. At Lana, they don’t over complicate. Super fine ingredients that do all the talking. The sweetbreads were like butter - crispy, juicy and clean in flavour. A good way to warm up for the Argentinian prime ribeye and strip from La Pampa that they brought out shortly after.

My favourite was the rib cap - perfectly crusted and smokey. Juicy and nicely dry-aged with a deep red colour. Only a touch of salt and this beef was perfect. For me the rib cap beat the strip despite the lower marbling. If you like beef, this restaurant is a must visit. An exclusively Argentinian wine list with lots of choice too. Highly recommend. Sobresaliente la nueva propuesta de @purosushi junto al hotel Puente Romano. En ese local algo angosto y escondido, al que se trasladaron en verano, Andrés Médici y su familia ahora plantean, complementariamente, una opción más informal y menos estricta, al margen de su menú omakase en la barra. Gran producto, técnicas depuradas y sensibilidad a raudales con la libertad de que el cliente elabore su propio mwnú. Una oferta de vinos y sakes más que interesante - y bastante razonable - y un servicio familiar y atento bajo el mando de Ivana Boeri que es todo amabilidad.
