@moss_edinburgh is a relentlessly curious farm-to-table restaurant in the heart of Edinburgh, deeply connected to its own organic farm in Angus. The menu is entirely Scottish, with over half of the drinks list sourced from across the British Isles.
But what truly sets Moss apart is how completely the restaurant reflects its ecosystem. Beyond the 90+ ingredients grown on the farm, almost every element of the dining room is born from it — tables crafted from its wood, ceramics shaped from its soil, paint made using its ash, and even the music produced in an outbuilding on the land.
Nothing is overlooked. Even the ink and quill used to sign a guest’s birthday card are made from flowers and feathers gathered on the farm.
With all that in mind, why Michelin have not endowed them with a green star is a mystery. Anyway, I thoroughly enjoyed my meal at Moss and can’t wait to return. Highly recommended

I managed to get up to Glasgow a while ago and enjoy a terrific lunch at @unalomebygc Unalome by Graeme Cheevers.
Traditionally a Buddhist symbol, Unalome, is Chef Graeme Cheevers first solo venture providing a seasonal and modern European menu, that has been inspired by Japanese culture and cooking. I really enjoyed this meal and would urge you to pay them a visit if you’re in the area
