I have eaten at Juan Amador's restaurant in Hagen, Mannheim and now Vienna. In Hagen, he was in his molecular phase with lots of deconstructed dishes topped with all kinds of foam. So-so food at Alkimia.
The massive oyster is as big as a steak but tastes astonishingly good, even the texture is great.
They have a massive fire pit for grilling and claim that it is much better than anything Extebarri has.

The rising star of San Sebastian, the first non-native Chef to get a star in this city which has plenty.

A modern cuisine based on Paulo Airaudo's home country with European influences.

I would be not surprised if he gets second star soon.

Fantastic place, not one tourist, not one mentioning in any list, serving great, honest food at prices which bring on the tears. A bottle of Mauro 2016 for €38 (!). The meat, as always, is a old retired dairy cow, this time a Holstein from Poland
