At @restaurantkadeau , the menu speaks with absolute confidence, quietly, elegantly, and with a language that feels entirely its own.
The meal begins with clams and vegetables, a pure expression of the ingredients. Then cured squid with asparagus and magnolia, where texture, perfume, and precision come together in a way that feels almost effortless. The mackerel tart follows with beautiful structure, while the tomato salad with herbs and seeds shows how perfect acidity balance can carry a dish with grace.
Then, one of the great moments of the meal: raw shrimp with pumpkin seeds and caviar. A dish that says everything about Kadeau’s confidence. When seafood is served this exposed, there is nowhere to hide, only sourcing, technique, and taste.
That same confidence appears in the sandwich of leaves, a course that turns something seemingly simple into something deeply complex. The signature hot and cold smoked salmon with lavender was extraordinary and perhaps the best salmon I have ever tasted. Then came raw scallops with young onions and hazelnut, and brown crab with celeriac and raw cauliflower, both showing the same quiet mastery of balance, texture, and purity.
The lamb, served in two expressions, one raw, one grilled, brought depth and structure, paired with preserves that speak to Kadeau’s world of fermentation, time, and place. Desserts followed with the same discipline: chewy fruits, mirabelle ice cream, walnut tart. Beautiful compositions showing the depth of Kadeau’s repertoire.
This is not luxury through excess. This is luxury through clarity, purity and precision.
Kadeau feels like a restaurant at the very top of the world right now, minimal, elegant, deeply personal, and completely deserving of its awards.

What happens when the ocean, the forest, the farms, and the seasons all speak the same language?
At @restaurantrenaa in Stavanger, they answer that question course by course.
Norway’s second three Michelin star restaurant, and the first in Stavanger, feels exactly as it should: intimate, elegant, and deeply confident.
The meal begins with snacks that immediately tell you where you are: bøckling with potato and kalix, langoustine with trout roe, asparagus with Jersey cream and kale, a brilliant crispy chicken skin tart with lovage, and duck liver with dark chocolate and pine.
Creative, technical, but more importantly, rooted.
Then comes the ocean: sea urchin with finger lime and green strawberries, mahogany clam with tomato and ramson, razor clam with almond milk and fig leaf, blue mussel… a quiet Nordic seafood tower built on purity, not excess.
But the cooked seafood is where the meal truly stopped me.
The signature squid with black garlic and grilled lemon. Scallop with barley and rose. Langoustine with jalapeño and marigold. Monkfish with morels and chicken butter.
Each dish showed extraordinary product, precise cookery, and sauce work at the highest level.
Even the bread had its own story, sourdough of remarkable quality, served with butter from a family that has been making only butter for generations. Rich, cultured, almost cheese-like, and unforgettable.
A final lamb course was elegant, but for me, the sea had already taken the night.
Desserts moved from clementine and sea buckthorn to koji ice cream with fennel and pine cone, before a beautiful petit four cart closed the meal.
@restaurantrenaa is not trying to imitate anyone.
It has its own rhythm. Its own silence. Its own confidence.
A restaurant where the ingredients feel like gifts, the technique feels invisible, and the best dishes remind you why three Michelin stars exist.

The newest Michelin star in Florida might also be one of the most important.
In West Palm Beach, inside an intimate chef’s counter with only a dozen seats, @emelina_wpb is asking a beautiful question:
What could Cuban cuisine have become if it had taken the fine dining route?
And the answer is not nostalgia alone. It is technique. It is restraint. It is memory, sharpened.
The menu starts with a tempura-fried red flounder, a childhood favorite, reimagined with elegance. Then Key West pink shrimp with mulberry, preserved turnip, and coconut curry broth, clean, delicate, almost effortless.
There is oyster with yuca, creamy and bright with preserved lemon. Then one of the most confident dishes of the night, little gem lettuce with strawberries, hazelnut, and ají dulce emulsion. A salad that proves confidence is not always about luxury ingredients, sometimes it is about making greens unforgettable.
The golden tilefish arrives perfectly cooked, with pil pil, and bok choy. Then dry-aged Florida beef with black bean purée and white asparagus the one dish that felt a little quieter, but still carried the language of the menu.
And then comes the soul, koshihikari rice with braised oxtail, inspired by rabo encendido. Coconut, cocoa nibs, mango, passion fruit, tres leches. Cuba, remembered and refined.
This is a very well-deserved Michelin star 💫
Not Cuban food trying to become fine dining. But Cuban food proving it always had the soul to be there.

Tenía curiosidad - y algún prejuicio, para qué nos vamos a engañar - con el nuevo Manero del hotel Don Carlos, en Marbella. Un sitio de moda en Madrid (con origen en Alicante) y un hotel con un pasado reciente con escaso interés gastronómico que tampoco auguraban grandes alegrías. Pero a veces hay que comerse las palabras, olvidar las ideas preconcebidas y abandonarse a un picoteo informal. Lo cierto es que el Manero de Don Carlos está muy bien montado: la plaza - eternamente desaprovechada- es un lujo, el producto - que, sin ser extraordinario, mira al lujo, obviamente, y también se paga con creces - está bien ejecutado y servido con cierta generosidad, el servicio es muy amable y es capaz de adaptarse al cliente y el ambiente está bien pensado. Un sitio para volver de forma recurrente que permite diferentes formatos de comanda en función del plan. @mank1966 lo hizo en Puente Romano y lo intentó en Villa Padierna. Jaime Tejedor ha conseguido - y parecía complicado hace ya cuatro años - imponer su carta de raíces catalanas y cimientos clásicos en una zona que, tradicionalmente, no ha sido especialmente acogedora con las novedades gastronómicas.
Pertenece a esa clase de cocineros que se conocen los fundamentos y la ética de su oficio y los practican más allá de las modas y tendencias o de los dictados de guías o listas. Nombres como Benito Gómez, Miguel Palma o Juanjo Carmona se vienen a la cabeza junto al de Tejedor en la provincia de Málaga. Una cocina de raíces, sabrosa, elegante y, al mismo tiempo, atávica, profunda y servida con la generosidad que sólo conocen los hosteleros de raza. Culinaria de verdad, sin atajos, y con detalles como un extremo cuidado con las temperaturas de servicio (qué importante).
Una pequeña joya, semi escondida en la Costa del Sol Oriental, a la que probablemente sólo le falta vestir un poco su envoltorio con ciertas comodidades. Y cada vez añaden más enteros una atención cuidada en sala a cargo de Víctor Aranda y la sobresaliente labor de Elisabet Lupiáñez al frente de una bodega que empieza a ser importante. La Petite Maison es la nueva medalla en la solapa del hotel Puente Romano. Una muesca más en esa más de veintena de restaurantes que lo convierten, con toda probabilidad, en el resort con mayor oferta gastronómica de Europa. La propuesta funciona a juzgar por la ocupación en mi visita. Y los números abruman: más de doscientos cubiertos por sentada (que se sucede en horario continuado), más de medio centenar de empleados y tickets medios que superan con creces las tres cifras sin vino y se disparan con él.
Dicho lo cual, la puesta en escena es agradable aunque puede resultar un tanto agobiante, el producto es correcto, sin ser notable, y la cocina cumple aunque con ciertos altibajos. Sobretablas continúa siendo un valor seguro en el panorama gastronómico sevillano. Sin tomar excesivos riesgos, Camila Ferraro navega en un recetario a medio camino entre platos clásicos andaluces versionados e inspiraciones de la cocina catalana en la que se instruyó, con pinceladas de cocina más creativa muy medida. El resultado es una cocina sabrosa, satisfactoria y reconocible que convence a un público fiel que no busca piruetas ni fuegos de artificio. La ecuación la remata Robert Tetas en la sala con un servicio fluido y bien llevado que completa con una sobresaliente carta de vinos, una de las más interesantes y abordables de Andalucía.
