9) CRAB CUSTARD – black walnut / caviar 🦀

For years now, I have admired @johnnyspero’s cooking @reverie_restaurant as some of the most delightfully surprising and progressive cuisine in Washington, DC. Nestled in Georgetown, away from the limelight of more bustling neighborhoods, he forged a distinct culinary signature. Johnny’s seafood-centric dishes melded personal preferences with professional influences while always playfully pushing beyond traditional bounds. Eschewing safe formulations meant daring to let his thoughtful but experimental creations move quickly from idea to plate. This didn’t mean that every course served was a resounding success. At times, some publications and guides—and a few diners alike—struggled to find agreement. But Johnny’s creative voice was his own, and staying true to his instincts found him the right audience 🙏

In spring 2022, long-overdue accolades finally arrived, most notably with Reverie’s first Michelin star. But just when the restaurant had hit its stride with a cohesive menu and consistent execution, a devastating kitchen fire shuttered it for the next year and a half. Resolved to move forward, Johnny took Reverie on the road across thousands of miles, from coast to coast as well as overseas. Cooking, dining, and learning with and from other chefs allowed him to breathe new life and expression into his flagship restaurant 👏

Now with a fresh design, Reverie feels rejuvenated. Time spent away from the national capital region has given the team a renewed focus and maturity. The dining room exudes a conspicuous level of refinement. But the restaurant’s spunk and fun remain fully intact, even if surrounded by a more polished setting 👔

Welcome back, Johnny. Your fine-dining cuisine has been missed. And with one hit after another, your tasting menu has never been better 💪

Lovely dinner last night! Chef Taiji Maru and his sous prepped a 16-course omakase at a friends place using best of the season’s seafood and vegetables. Lots of delicious nigiri and small plates that were served grilled, fried, raw and poached. The tan tan men noodles to start were incredible. Perfectly chewy in texture and served in a super creamy sesame sauce with spicy minced pork. Could have had two bowls of these - the firm favourite of the table. Following that was the unagi tempura. Sweet, savoury and stupidly crispy. Also loved the 5-day ice bath aged squid and cuttle fish nigiri with oscietra caviar. The squid was buttery soft and creamy and the caviar melted away with the bite. Nicely seasoned Shari that was firm to the touch but dissolved in seconds. The Akami and otoro were ice bath aged for 10 days, lovely stuff. Lots of tasty plates throughout the night but the grilled Sando on shokupan with mustard, miso tonkatsu sauce and black truffle was the best way to end. For dessert, a perfectly light and crisp rhubarb monaka. Intricately made with delicate flavours that bounced off once another. Sharp, sweet and moreish. Lunch at @thejointldn

In the heart of Brixton market is a little hidden gem, serving fantastic brunch dishes and incredible smoked BBQ. The burgers and bbq chicken wings looked incredible, but all i wanted was their whole rack of belly ribs smoked for 5 hours and glazed with a spicy bbq sauce. It was absolutely delicious, perfectly smoked, and just fell off the bone. With some french fries and coleslaw, the perfect lunch. Definitely some of the best ribs I've had in London, so please go check it out!!!

Alle har vel fått med seg denne nyheten? Tre uformelle karer som etablerer seg på kommersielle Aker Brygge! Restauranten har tre konsepter under samme tak; Hekla, Vågen og Takterassen. Jeg spiste på “Hekla” som er a la carte sharing menyen de har ute på Brygga og inne i restauranten.

Jeg hadde høye forventninger ettersom jeg er fan av både Katla og Jimmy’s! Noe av det første jeg tenkte var at prisen var svært høy! Men forståelig nok! Store lokaler, prima plassering i tillegg til en stor uteservering, de går nok ikke i pluss med det første!

Menyen på “Hekla” er helt klart Katla-inspirert - retter med smaker fra Asia, Mexico og midtøsten. Samt noen enkle retter som caesar salat, vongole pasta og fish n chips, klassiske retter du vil finne på Brygga.

Kamskjellen var perfekt stekt med medium kjerne, og ble servert med tynne strimler av stekt kål og koriander, på en kremet red curry saus med mye kick! Det var veldig hyggelig å bli overrasket med en kongekrabbe-bein blant alle krabbeklørne. Krabben var allerede halvveis knust, men du må fortsatt dele det opp. Peppersausen var nydelig! Klissent med masse pepper! Pork belly var fantastisk godt, sprø svor og saftig kjøtt, ble servert med ferske urter og hele thai chilis! Uformelt og veldig i streetfood-stil!

Neste gang skal jeg prøve menyen de serverer på “Vågen” en sjømatmeny på 5 serveringer til 995 kroner!
