They have weekly specials and have some amazing flavor combos on the menu.

Finally had a chance to visit @wearenusret! The eponymous restaurant by #SaltBae is located in the heart of midtown in an elegant dining space, and makes steak the star of the menu.

Have you tried @queencitycrust yet? @njdotcom ranked them the #1 pizza on the Jersey shore of the 55 other spots they listed and ranked! It’s very good Detroit-style pizza and lighter texture more similar to an authentic Italian focaccia than a lot of other Detroit pies I’ve had. It’s a very good premium pizza conveniently in the heart of LBI.

A malta dos pratos e dos copos ficou frustrada com o aviso envergonhado do Eleven Madison Park: “vamos voltar a ser inclusivos, servindo carne, peixe e marisco, outra vez.” Isto, depois de em 2021, com pompa e circunstância, ter anunciado a passagem a um menu plant-based - palavras doces, queridas intenções-, em “defesa da sustentabilidade”. E por um mundo melhor.

Sucedendo ao “gourmet” do início do século, sustentabilidade é o chavão desta década. Não há chefe de cozinha e copeiro que não entoe loas de amor à sustentabilidade ambiental. Todos somos kilometro zero e produto local, verdade? Mas como antes da barriga cheia é preciso matar a fome, antes da espiritualidade vem o vil metal. Alguém tem de pagar as contas. Ou numa linguagem holistica, não há sustentabilidade ambiental sem sustentabilidade económica. Há sempre um negócio e acionistas que querem ver o seu investimento remunerado. Não querem ir para o céu. Querem lucro.

Ao contrário da minha cara-metade que é eco-marxista-caviar-chic eu sou pelo capital. Acho bem que quem corra risco e meta dinheiro queira ser remunerado. Ou, agora numa linguagem menos prosaica, quando não há dinheiro, não há palhaços.

Mas vamos ao ponto que importa: um menu vegetariano que custa 400€ liberta obviamente mais margem do que um menu com com carne e peixe. Mas o negócio não está no menu. Está nos up-sellings - caviar extra, trufa extra… e no vinho. Vinho é a palavra chave. Mais de 50% da margem libertada num restaurante deste tipo vem do vinho. Em alguns casos, muito mais. Estereotipando, a geração line-up de garrafas é masculina, de meia idade, come chuleton. E gasta mais. A geração kombucha é plant based, bebe um copo de branco de baixa intervenção e gasta menos. Conceitos diferentes exigem modelos de negócio diferentes.

Excellent omakase @sushifujimoto last night . From a startling clean awabi to start the meal , thru many outstanding nigiri , particularly those with bolder flavour profiles where they were often paired with a little spring onion which suited my palate to a tea .

Katsuo - loved this , great char and fat content
Tako- perfectly steamed

Shima Aji - luscious and fatty , one of the best I have had
KOHADA - lightly pickled
Akami - strong soy marinade
Chutoro - beautiful mouthfeel
Otoro - overshadowed by the outstanding chutoro
Sumi Ika with grilled tentacles - right in season
Sanma - gorgeous fat and depth of flavour
Ikura - briney and clean
Kuruma ebi cooked in saltwater , still very warm , great contrast
Murasaki uni - sweet
Char grilled unagi - piping hot melts the nori , delicious !
