中華そば 銀座八五

Hachigo in Ginza offers high-quality ramen at a low price of 850 yen. The restaurant's concept is simple: hachi (eight) go (five), with a meaty mix of chicken and duck, shellfish, ham, and chashu pork. Hachigo also offers a 3000 yen seasonal bowl, although they haven't yet produced it. The ramen is made without tare, a key ingredient in ramen, and is known for its ramen hospitality.

This place has been on my list for a long time. With just 6-seats, 1-Michelin star and a tiny menu, it’s 100% worth the wait. Chef and owner Yasushi Matsumura has really created something special here. His 30 years in French cuisine most definitely makes its way into the food. Recommended bowl: Salt from France

The shio based soup here contains salt from France but no tare, a rare technique in ramen. The soup is a clear, golden broth of Nagoya chickens, duck, ham, shellfish, roasted mushrooms, dried tomatoes, dried shiitake mushrooms, kombu, leeks and no MSG. Noodles supplied by Asakusa Kaikaro. Excellent Shio ramen in the middle of Ginza. Light, golden broth. Noodles which come al dente and become softer in the hot broth.
Chashu has a light smokey flavour.
Long wait.
