Another Kappo restaurant in Kyoto. Completely different style than Suzuen. Hectic, busy, full to the tilt, churning out great food at high speed. 5 Chefs behind the counter working non stop.
All of this with great deliberation and technique. And for half the price.

For quite some time Saito-san is considered by many the pinaccle of Edo mae sushi.

This year was not easy, 17 new 3 star restaurants spread from Hokkaido to Shanghai to Taipei to San Francisco. Additionally there are 2 more restaurants which changed the Chef but retained the 3 stars. In my book another "new" 3 star.
In total 19.
