Som entusiast av eksotiske kjøkken har jeg besøkt mange fine dining-restauranter med fokus på ulike kulturer. Dessverre har opplevelsene alltid vært skuffende – manglende innovasjon, små porsjoner og en tendens til å redusere krydderbruken i stedet for å fremme de opprinnelige smakene.

Denne gangen var det helt annerledes! Dette er en restaurant som skiller seg ut med masse kreativitet og originalitet. Det føltes som en skikkelig hyllest til filippinsk kultur, der norske råvarer ble brukt på en smart måte med fokus og respekt for filippinske tradisjoner👌🏽

Kizzo JUST OPENED in the former StepChld space in the heart of Northeast, Mpls! The official Grand opening was this past weekend 9/13/25 at 10am for brunch. They serve brunch on the weekends 10-2, they’re open Monday, Wednesday, Thursday, Friday and Saturday at 5pm for dinner service! Their In-house made Cinnamon Rolls @roll.ritual with rotating flavors weekly are some of the BEST I’ve ever had & they are only available right now Saturday/Sunday for brunch 10am-2p! Don’t worry the Step Chld cooper burger 🍔 & magic wings/ some of the same menu items can still be found @kizzorestaurant! 🫶🏻🫶🏻🫶🏻

The space formerly known as StepChld is now Kizzo, a nod to owner Kamal Mohamed’s childhood nickname. The restaurant will retain some echoes of Stepchld, but in a more casual, counter-service environment that doubles as a sports bar on big game days. The hope is to create a neighborhood-friendly space that falls somewhere in between hole-in-the-wall dives and high-end eateries. I look forward to checking out their dinner and trying more cocktails! 🤭🌈🍩👯‍♀️

@tradicionalenyc open it doors for the very first time with an unforgettable collab! 🇵🇭🙌🏻

The restaurant isn’t quite open yet, but they christened the space last weekend with their very first service. It was a special dinner featuring guest chef @tomccunanan, James Beard Award winner and formerly of DC’s Bad Saint, together with Chef Anton (@choybee).

They prepared a thoughtful 7-course tasting menu rooted in the Filipino flavors they grew up with. It was an incredible way to mark the beginning of what’s ahead for Tradicionale.

The restaurant’s soft opening begins Tuesday, 9/16. Chef Tom will also be back in NYC for another collab this weekend at Demo.

E enquanto o Eleven Madison Park volta à carne para salvar o negócio, outros fazem rota inversa. Intuitivo, há 30 anos que Alain Passard traça o seu caminho. Nem sempre em linha recta. Em 1986 assumiu o restaurante do seu ex-mentor Senderens e atinge as 3 estrelas michelin em 10 anos. Em 2001 cortou a carne e fez do vegetal um manifesto – muito antes da retórica da sustentabilidade estar na moda. Ao lado de Paris, lançou as suas hortas e torna-se auto-suficiente. Curiosamente, no mesmo local onde passa a satisfazer uma nova e velha clientela ávida de carne, cozinhando à lareira pantagruélicos assados. O vegetal é paixão mas o rôtisseur desperta de novo. Nesta década chegam as chimère à poils et à plumes, casa borrego e pato, galinha e pombo. A sua cozinha, o seu negócio, foi sempre, afinal, uma quimera animal-vegetal. Passard é um charmeur, adora a sua horta e o seu negócio. Nunca cedeu a vender o nome nem criou sub-produtos. Está no restaurante todos os dias, cozinha e dirige a orquestra. Espalha charme e paixão. Ali formou grandes nomes da cozinha francesa. Barbot, Toutain, Grébaut, Beldroega. Muitas estrelas, um só maestro.

Recentemente anunciou a passagem a um cozinha 100% vegetal e estávamos lá na semana que tudo começou, ou acabou, outra vez. E foi um menu a cheirar a fim de festa.

Cozinha de sabor, empratamentos insípidos onde, desta vez, o tomate foi um protagonista que soube a pouco. À falta de qualquer proteína vegetal, a solução foi comer pão. E quando o cliente se entope de pão para ficar saciado, o menu está obviamente desequilibrado. Numa tendência que se tem agravado desde o covid, o serviço foi aos tropeções. Faltou finesse, atenção, classe. Faltaram detalhes, como o antigo carrinho de infusões. Faltou tempo. A carta de vinhos, que nunca foi um exemplo de ecletismo, definha agora sem que surjam alternativas, alcoólicas ou não alcoólicas, que fujam da banalidade e tragam alegria à mesa.

Hoje, o Arpège caminha para se tornar um bom bistrot clássico vegetariano, onde o sabor é rei. Para longe do glorioso restaurante 3 estrelas michelin que já foi.
