Nestled in a quiet alley, Suetomi stands modestly, almost easy to miss. The interior has a simple and calming atmosphere, featuring a counter and two private rooms. The head chef is humble yet engaging, sharing interesting stories in a friendly manner. In the musical instrument and studio hub of Shibuya, I found a Japanese restaurant that uses pin materials. With only 6 counter seats, I was invited by a regular to start at 5 PM on Saturday. I had pre-ordered the rare Tori-gai (Japanese clam) from Miyazu as an option. The owner’s preparation and service were of top-notch quality. While grilling the Tori-gai was delicious, I wished I could have tried some raw as well. This time, I was also allowed to take some special photos.
