Há uma semana lambuzava-me com a omellete de lavagante da @a.r.a.f.a.e.l.a , cá por casa. Isso recordou-me que este post, sobre a mais famosa omellete, ficou por registar no feed - assim como muitos outros momentos da viagem de Janeiro, à Tailândia.

Pelas mãos de Jay Fai, que nos seus 78 anos não deixa todos os dias ir para trás do wok com os seus famosos óculos. Recebeu uma 🌟 Michelin e com isso o salto para o estrelato mundial — um feito raríssimo para este tipo de cozinha, já que no mundo existirão um par de estrelas michelin em restaurantes de street food.

@jay.fai at tip top form. When most cooks and chefs’ bodies are broken at half her age, Jay Fai, now 81, is going stronger than ever. The famous #crabomelette has a crispy crust while crab meats are plump and robust in flavour, as only the very freshest and best quality crabs can deliver. For sure a meal to be remembered. I’ve eaten at Jay Fai several times and it’s always been hit and miss.

Last week, my meal was near perfect. Every dish hit the mark, and the ingredients were extremely fresh and generous. But more than anything, the execution and seasoning marked it as one of the highlights of this BKK trip.

Such a wonder seeing an 80-year old lady standing in front of a super-hot stove vigorously churning out dish after dish for more than 8 hours non-stop while maintaining such consistency.

5:47AM Start queuing. Shockingly, even at this time, I was #2. However, as #1 was paid to queue and she was so impressed with my arrival time, she kindly offers me the front spot.

6:27AM staff kindly gives us chairs to sit on.

7:42AM friend has a genius idea to GRAB coffee and have it delivered to queue.... More

9:45AM Crab Meat Omelette arrives.
