Fascinating dinner last night at @sushi_nishinokaze in the hands of owner Julien Doan and chef Vincent Gee. This 8-seat Edomae omakase sushiya is an impressive newcomer to the Montreal restaurant scene serving wild fish and seafood, some local, but most imported from Japan. A beautiful display of mastered technique and taste. Very expensive, but a truly unique experience. A feast for the eyes and the senses. Incredible sake and wine selection too. Tasting Menu @bayridgesushikissimmee

This was the main course of their 8 course tasting menu!

Although they have a strong raw fish game most of the courses focus on Wagyu and truffles or a combination of both.

I love Wagyu and truffles, but they have dominant flavors and if overused it can become monotonous in my opinion.

The main course was the highlight of my meal hands down!

Spotted Prawn with Foie Gras @izukiorlando

It was hard to pick a favorite and the execution was close to impeccable.

The chef behind the menu has worked in multiple Michelin Star kitchens in NYC & LA. His experience is reflected on the menu.

It was a combination of tradition and innovation with high end western ingredients like Foie Gras, Caviar & Truffles.

There were several courses with the use of truffle. I love truffle, but I’d suggest not to overuse it.

I love it as a building block to a great dish and this restaurant embraced that exact concept with this dish and with many others on their menu.

Rocoto Butter & Ají Amarillo Mash Potatoes that’s the way you take meat and potatoes to another dimension.

I like my food to be hot if it’s intended to be hot and my mash potatoes were a little cold. Luckily it’s an easy fix!

They nailed this dish from thought process, to menu, to execution!
