Smoked Room Dubai is an experience of precision and restraint. Very good rhythm. Elevation of flavors. A happy marriage between Spain and Japan, between avant-garde and restraint, that holds us from beginning to end. Everything is beautiful. Everything seems designed to always work. And it works.

It’s the price of perfection: when you export fire, you risk making it predictable. But there’s merit here—maintaining an identity, even far from home. The team asserts itself in its own name, not just as a copy of Madrid.

An exceptional meal at Endo at the Rotunda by @kazutoshi.endo. Scroll to the very end to see videos. The 3 hour long meal is one of the best dining experiences to be had in London. Endo constantly interacts with the diners in a fun and engaging manner. The food is excellent and the room is beautiful. Wild blue fin tuna, mushroom and onsen eggs with cavolo nero (their take on a carbonara) / Orkney scallop with @n25caviar / Cornish sea bass / chicken with black truffles, shimeji mushrooms in a stock made of ginger, spring onion and chicken bones / tuna / horse mackerel from Devon, marinated in salt and 15 year aged vinegar with kombu kelp on top / smoked sea trout / wagyu beef from Miyazaki / clam chowder soup using three different types of clams / squid with sudachi lime and salt / Tokyo turnip / fatty tuna for Endo’s signature business card / morel stuffed with langoustine, uni and nori leaf with sansho pepper (top dish) / lobster and mussels from Cornwall / tuna / shio koji soufflé with an apple and pear compote. Endo San’s sushi is excellent and some of his non sushi dishes are brilliant whereas others don’t quite hit that mark.
