I was disappointed that I couldn't reserve a counter seat, but it was wonderful to have a spacious, luxurious sunken kotatsu room for just the two of us! I was able to have a great conversation with the chef in the private room, which was the highlight of the evening. This was my third visit, during New Year's, the spring festival, and now early summer. When it comes to early summer dishes, you can't miss ayu (sweetfish) and hamo (pike conger). The ayu from Gujo Hachiman was still small, served with a special sauce made from yuzu and salt. Gujo Hachiman is well-known for its traditional Gujo Odori dance, but it turns out that it is also held every year on Aoyama Street, due to the connection with the local lord's residence that used to be in Aoyama. The Yoshida River, a tributary of the Nagara River, flows through the center of Gujo Hachiman, creating beautiful waterways throughout the town. Jumping into the river from the bridge railing is a rite of passage for local boys, and when they dive in while pinching their noses, cheers erupt from the crowd. It’s a nostalgic town that retains a pastoral beauty. Recently, it has gained fame again as the home of actor Masao Kondo, featured on NHK BS. Thinking about the ayu brought from that river gave me a sense of connection. However, to be honest, I believe nothing beats ayu that has been perfectly deboned and grilled with salt. The first dish was a hamo soup, and the sashimi featured hamo as the star. When it comes to the perfect background music for enjoying hamo, nothing beats "Konchikichin." It reminded me that the Gion Matsuri festival is just around the corner. This time, Haru's famous sesame dressing was made with lotus root, and I was surprised by how translucent and white it was. The sesame paste that had been mixed in beforehand deepened the flavor. The classic simmered dish with pickled vegetables, flavored with hamo bone broth, also hinted at Kyoto's culinary traditions. All the dishes were served in small portions, which might lead one to think there was less food, but by the time the rice came, I was always full. The white rice mixed with corn butter was accompanied by the usual tuna tartare and pickled green chili, and I greedily enjoyed both. For dessert, we had kuzukiri, which also reminded me of Kyoto flavors, topped with soft-cooked green plums and syrup. It wasn’t the familiar black syrup, but I drank every last drop, impressing the young staff at the restaurant. I had been eating less due to a recent hospitalization, but this meal felt like perfect rehabilitation, and I left feeling revitalized. Thank you for the wonderful meal. Mr. Ogawa, the chef, serves a Kaiseki course that presents "dishes at the moment when the ingredients shine the brightest". The ingredients used for the dishes are purchased daily from Toyosu Market and the tuna specialist wholesaler Yamayako. The rice is ordered directly from Iwakubu Shoryu Tanada Rice on Sado Island. With his precise timing, Chef Ogawa serves every dish at the exact moment they shine the most. Recently, the menu has included Shirakawa broth, small turnips with sesame seeds, fried prawns and potatoes, and salt grilled cod milt.

新鮮な食材を毎日豊洲市場や、マグロ専門仲卸「やま幸」から仕入れ、お米もは佐渡「岩首昇竜棚田米」などを直接取り寄せている。その「御成門はる」の大将・小川 晴行氏がこだわるのは「タイミング」で、一つ一つの料理の「おいしい」と感じる時は一瞬しかなく、その美味しいタイミングを見逃さず、いつお客さんに出したらいいかを見極めている。〆の「土釜ご飯」は季節によって白飯であったり、炊き込みご飯であったり、白飯の後におじやだったりと、訪れるごとに楽しめる。

Fresh ingredients are procured daily from Toyosu Market and tuna specialty store Yamayuki. The rice is also bought directly from Sado’s Iwakubi Shoryu Tanada rice farm. Head chef Haruyuki Ogawa believes that each dish has a specific moment where it's at its most delicious, striving to serve his guests during that window of flavor.Earthen pot rice concludes the meal. The rice can either be white rice, or Takikomi-gohan, or rice porridge after the white rice, depending on the season. Around 10 varieties of sake are available.

하나하나의 요리를 먹으면서 "맛있다!"라고 느끼는 시간은 오래 지속되지 않기 때문에 오가와씨는 손님들에게 요리를 내는 타이밍에 심혈을 기울이고 있습니다.
