When you enter the restaurant and take your seat, you’re presented with the handwritten Fugu sampler course menu, and you start proceedings with the permanent menu items. Dishes include grilled fugu milt, deep-fried fugu, grilled fugu with salt, mackerel cooked in miso, etc. The closing porridge with remaining Ankimo sauce is also said to have the best taste.

Photos generally don't do fugu justice but aside from the perfect texture and crunch, the ankimo sauce with negi and spicy radish topping is something I could live with eternal top-ups, was the perfect complement side dish.
