I visited Tenpaku, known as one of the most difficult restaurants to reserve in Chiba. I had been looking forward to dining here for a long time, and I was excited the moment I secured a reservation.The tempura, carefully fried one piece at a time right in front of me, was cooked slowly in low-temperature oil to maximize the quality of the ingredients. The light texture and the natural sweetness and umami of the ingredients were impressive. The batter was thin and delicate, allowing me to enjoy it without feeling heavy until the very end.That day, I enjoyed a course centered around seasonal vegetables and seafood, and every dish was of high quality, leaving me extremely satisfied. The scallops were particularly remarkable—thick and sweet, bursting with flavor with every bite. The shrimp had a perfect balance of firmness and aroma, and I could enjoy even the head. The anago (conger eel) was fluffy with a refined fat that melted in my mouth, bringing a smile to my face with its deliciousness.From the selection of ingredients to the frying technique and timing of service, I could feel the chef's dedication in every aspect of this renowned establishment. I truly understood why it’s so hard to get a reservation here. If you're looking to enjoy tempura in Chiba, this place is definitely worth a visit at least once. 千葉中央駅から歩いて向かいましたが、千葉駅くらでも全然歩ける距離です。昼に伺いたかったのですが、予約が取れず夜にお邪魔しました。我々以外のお客さんはひと組。そのうちの1人は常連さんのようでした。 食材は野菜がメイン。千葉の食材が特別多いとかはなく、結構色んな地域の食材を使われているようでした。低温でじっくり揚げていくタイプで、揚げている音もほとんど無く、ほぼ無音状態。 時折見せる店主の笑顔で緊張感は有りませんが、何か小声で会話をしてしまう感じ(笑) 定番の海老からスタートし、野菜、たまに魚介類を挟みながら。感動したのが“赤茄子”。トロットロのこれはもはや茄子じゃない。でも茄子じゃないとこの味、食感は引き出せないんだろうと感心しまくりでした。穴子もサクフワ。後半にも海老登場。とうもろこし2種もそれぞれ良い味。メークインは90分ほど火入れしているそうです。 とても上品に天ぷらをいただけた感じで、幸せな時間でした☆ Less

I made a reservation through Ikkyu.com and visited. The owner trained at Ginza Ten-Ichi before opening this place in 2015. The unique feature here is frying at a lower temperature than usual, using the same oil throughout the cooking process. He believes that the changes in the batter due to the oil contribute to the overall flavor experience. The course includes 18 types of tempura plus a rice dish, primarily featuring vegetables. The "Red Eggplant" was exceptionally delicious. It is served with aged soy sauce. The exterior is crispy, while the flesh inside is firm and juicy. This is the best eggplant tempura I have ever had. Another standout was the "Tomato." This tempura was fried slowly over an hour and a half. The sweetness and umami are concentrated beautifully. The temperature of the oil and the thickness of the batter are adjusted perfectly. The tempura, fried with meticulous calculations, is truly a work of art. It was a great meal. He became independent in Chiba City in 2015.Tenpaku employs a unique method of cooking tempura, using a temperature range of 60 to 180 degrees Celsius, carefully adjusting the heat for each ingredient. This technique enhances the moisture content of the ingredients while separating the umami and odors, bringing out their natural flavors more strongly.The oil is used continuously without changing it throughout the frying process. The changes in the oil during frying are expressed as variations in the flavor of the tempura batter, showcasing a scientific and precisely calculated approach.The fried seafood was excellent, but the vegetable tempura was truly delicious.My favorite was the red eggplant. It had a texture similar to fried tofu, crispy on the outside and meltingly soft on the inside. The addition of a sweet and salty aged soy sauce accentuated the eggplant's inherent sweetness, creating a burst of flavor with each bite! Other vegetables like cherry tomatoes, kohlrabi, and May Queen potatoes were also exquisite in taste!The owner's explanations and service were attentive.
