Wild "blue" unagi was also served. This might have been my first time try "ao-unagi". One potential sign of wild origins for eel in the thickness - can tell from this pic that it's much more plump than typical. Served just with some shoyu tare, no heavy grilling. Beautiful flavor.

Two rice dishes appear to prep diners for the start of the sushi course. First, dried hotaru ika (this was late May, so appropriate) and its guts. Then Setouchi managatsuon with negi. Local bei-ika. Sort of like hotaru squid but meatier, butterflied open to rest on top of the shari.

"First of season" untreated kuro-uni.

Ozo-ebi. Sato san mentioned he only sees this 2 or 3 times a year.

Inarizushi with the su-meshi. Because this is Kansai, after all.

Stunning, pristine local seafood. Buri from Imabari and uncured ma-saba. Buri typically has a reputation as a winter fish sourced from the other coast of Japan, but this piece (from a notably smaller fish) shattered that preconception. Madai from Imabari that had been caught 10 hours earlier by Fujimoto-san. Doesn't get more local than this.

No student of Yoshitake San *doesn't* serve awabi with sauce of its own kimo. This dish has become so uniquitous these days that it's almost been forgotten as a Yoshitake signature. This was a fantastic kuro-awabi from Futagami island off Kyushu.

For many sushi chefs, their first three or four nigiri are a showcase of their skills and aesthetic, and I got that impression here.
