The iconic Veal Shank carved table-side at @saddlemadrid – incredibly flavorful, tender, and a fitting tribute to the legendary late Spanish chef Santi Santamaría. Served with a side of silky potato purée and finished with veal jus poured on top. Absolutely epic!
