Dessert at Sushi Yoshinaga, the new 2 starred sushi restaurant in Paris: matcha ice cream designed with @alainducasse

3 scoops of ice cream with varying % of matcha and different milk. The difference in percentage is small yet the flavour is quite different.

Dinner back in May 2023 at Saint-Peter which was added to the 2024 World Best Restaurants list at number 98. Back then it was already a promising restaurant. Here were the highlights of my dinner:

Fish Butchery Charcuterie
Fiore Bread & Yoghurt Cultured Butter
Original idea to serve fish charcuterie, sadly the chorizo was the tastiest.

Southern Calamari & Berrima Octopus,Yellowfin Tuna ‘Nduja
Very creative and tasty dish.

Line Caught Mahi Mahi
Borlotti Beans, Rainbow Chard & Smoked Eel Emulsion
Best dish of the night. Nice barely seared fish. The vegetables were nicely cooked. The beurre blanc really enhanced the overall dish.

Snapper Eye Ice Cream
Rhubarb & Vanilla Macaron
Very eye catching dessert. Loved the idea and the ice cream.

Two amazing dishes served during lunch.

Like a white rice with “moritos” beans, squid and mole
Just this dish made the drive on sinuous mountain roads worth it. The thinly chopped squid made to look like risotto was wonderfully tender. The risotto sauce apparently made from risotto after they removed the rice was a nice binding element. The squid ink and beans were great complement and added a savoury taste.

Razor clam pickled in seaweeds and kombucha with cow tendon
Another mind blowing dish. What a brilliant idea to use beef tendon as a condiment to a seafood dish. The tendon was exceptional. Its sauce was thick and savory. The kombucha on the other side added some lightness and acidity.

Re-Naa serves a very long tasting menu. I particularly enjoyed the hot seafood dishes. Chef Renaa combines the local seafood with his French technique to deliver delicious food. His desserts were also very creative.

Sasaki-san requests that guests do not post pictures of their food in order to preserve the surprise for other guests. Pictures of the chef and his team are ok. I was lucky enough to go there in November during crab season and was served their signature crab fried rice dish. Amazing!! Can’t wait for my next visit.
