Paired with liver sauce, it was simply exquisite. The Kitamurasaki sea urchin was packed with a rich umami flavor that reminded me of Hokkaido, all wrapped in its delicate and sweet taste—absolutely irresistible.Additionally, the new squid had a gentle and refined flavor, but the moment you bite into it, you can enjoy a pleasantly firm texture that I absolutely love. This luxurious Edo-style sushi allows you to fully savor the delicious offerings of summer. Once again, it was a wonderfully happy and delicious experience. Less

However, the moment I took my first bite, all my concerns vanished, and I was filled with joy and happiness from the food. The ingredients used are of the highest quality, and it’s clear that no expense was spared in sourcing them. One standout dish was the grilled abalone, which was astonishingly large. I rarely have the chance to enjoy it grilled, but its unique, pleasant texture and concentrated flavor were exceptional.Additionally, the seasonal eel was perfectly cooked, with a crispy exterior and a fluffy interior, without any excess greasiness. It was creatively paired with a nut sauce, and the sweetness of the nuts complemented the eel beautifully, showcasing remarkable harmony. The hairy crab was also outstanding. The sushi was meticulously prepared, bringing out the umami of the ingredients to the fullest. The slightly firmer rice had a perfect balance of salt and vinegar, melting in my mouth and blending beautifully with the toppings. Moreover, the presentation of high-end ingredients displayed prominently at the counter, along with the use of Chrome Hearts for the chopstick rests and coasters, added a touch of sophistication and playfulness.Given the Ginza pricing, the cost is on the higher side, but for the opportunity to experience such top-quality ingredients and craftsmanship, it is well worth it.This was a remarkable dining experience that completely made me forget my discomfort. It is undoubtedly a prestigious establishment. Less
I spent most of last month in America, and although I received invitations to eat sushi there, I declined because I wanted to enjoy it in Japan. So, I finally visited this place again after a long time. I paired some Japanese sake with appetizers, and then enjoyed the sushi, which was simply delightful! The flavors truly resonated with me. It was a great meal! I will definitely come back!
Sushi Saeki (o^∀^o) Today was delicious again! The abalone was soaked in seawater, and it was my first time trying it this way. I realized that the concentration of seawater enhances the flavor! Here’s what I had today: Abalone with Shine Muscat grapes (soaked in seawater with the same concentration) Hairy crab with asparagus and yam namako in a soup (mixed with crab miso and truffle paste) Ishidai (stone bream) from Mie Prefecture with its liver Kumamoto sea eel with wasabi pickled... You can feel the good relationship between the chef and the apprentice, creating a lively atmosphere.【Recommended Occasions】It has a slightly mischievous vibe, making it a bit tricky for business meetings. For companions, starting at 6 PM is just about manageable, but it might get hectic. The entrance lacks the restaurant's name, making it hard to find, but this floor only has Sushi Saeki. The interior is a deep black or dark brown, giving it a sophisticated feel, yet there are Chrome Hearts coasters on the tables, giving it a trendy Minato-ku impression. The location is closer to the corridor near Taihei Elementary School, so the clientele is somewhat casual. The private counter room is attended by the head chef, which results in slower service. Despite the limited number of dishes, the pace becomes hectic towards the second seating at 8:30 PM, making it difficult to order additional items. On the bright side, the limited number of dishes makes it easier for women to enjoy the course. The sushi rice is firm and made with quality red vinegar, which I prefer. Although there are fewer dishes, the ingredients are luxurious and delicious. Less

The layout centers around a counter, creating a comfortable environment that doesn’t feel overly tense, allowing first-time visitors to enjoy their meal in a relaxed manner. The course menu flows seamlessly from appetizers to sushi, showcasing seasonal ingredients. The appetizers are crafted to enhance the natural flavors of the ingredients while being mindful of their pairing with drinks, building anticipation for the sushi to come. The sushi itself offers a delightful harmony between the rice and the toppings, allowing the unique characteristics of each fish to shine through. Particularly, the tuna and white fish, as well as the delicate preparations of seasonal fish and shellfish, reflect meticulous craftsmanship, emphasizing skill over flamboyance. The rice has a perfect balance of acidity and temperature, embodying the essence of traditional Edomae sushi. The way it melts in your mouth upon tasting is exceptional, highlighting the high quality of each piece. I believe the charm of this restaurant lies in its ability to maintain overall balance through the chef's skill, rather than relying solely on the quality of the ingredients.Additionally, the service provided by the owner and staff is attentive, with pleasant explanations of the dishes and a comfortable conversational distance. While the restaurant possesses the elegance typical of high-end establishments, it avoids stiffness, creating an environment where one can purely enjoy the meal. The pacing of the service is also commendable, allowing for a stress-free dining experience until the very end.Among the many sushi restaurants in Ginza, I feel this place stands out for its well-balanced satisfaction in terms of cuisine, ambiance, and service. It is highly recommended not only for special occasions but also for sushi lovers who wish to savor Edomae sushi at a leisurely pace. I thoroughly enjoyed the allure of sushi presented through honest craftsmanship rather than flashy displays. Less
It's been three months since my last visit to this restaurant. This place is truly amazing; I can only say how delicious it is. Every time I come, it keeps evolving. The sushi is, of course, at an impressive level, but the individual dishes served before the sushi are genuinely delicious! They never get boring.Thank you so much, as always. Today was another unforgettable experience. m(_ _)m
This restaurant can be quite difficult to book, but I was able to secure a reservation through AMEX's Pocket Concierge (KIWAMI Dining) after a cancellation. The head chef trained at Sushi Noguchi in Osaka before opening Sushi Saeki in Osaka, and later moved to Ginza after a stint at Nanzenji in Kyoto. We started with the appetizers, and each dish was impressively crafted, featuring high-quality ingredients and luxurious items like caviar, all of which were absolutely delicious. The sushi was also exceptional,... The selection of sake was excellent, and paired beautifully with the food, making it easy to enjoy. The course is priced at JPY 48,400, which is a bit high, but the sake was reasonably priced at JPY 6,600 for about five glasses. I definitely plan to return in a different season if I can get a reservation.(Appetizers)- Flounder with caviar- Hairy crab from Funka Bay with crab miso sauce- Squid sashimi from swordtip squid- Ribbonfish (dragon) with a sauce of wild pepper- Hand roll with seasonal fish- Soup with whelk and water spinach(Sushi)- Choshi tuna- Medium fatty tuna- Young gizzard shad- Sea urchin rice bowl with red clam from Hamana Lake- Bird clam from Miyazu- Bird clam's belly- Young horse mackerel from Amanohashidate- Sweet shrimp- Sardine- Young sea bream- Simmered clam- Toro-taku (fatty tuna with pickled radish)- Dessert from Amashu. The earliest reservation available for December is in May, which is five months away. I wonder if it's because winter is the season for delicious ingredients like crab and fugu, making it more popular?I really wanted to try fugu this time. T_TIt seems that the ingredients in May might not be as good as during the usual season. Especially for Japanese cuisine, I feel this difference compared to winter. However, last year's experience at Sushi Saeki was truly impressive. My companions and I were talking about how every dish was delicious, but this time, the excitement felt a bit less intense. The 6 PM seating felt a bit rushed, especially since there was also a 8 PM seating. This time, it felt even more hurried.I’m looking forward to my next visit! ^_^ Less

In my opinion, no matter how many times I go, I always think, "This is just incredibly delicious."The course, from appetizers to nigiri, leaves me completely satisfied every time from start to finish. The quality of the fish, the rice, the temperature, and the overall flow of the meal create a truly wonderful aftertaste. Rather than getting into details, I simply feel that "the sushi is absolutely amazing."Additionally, I personally love the playful details found throughout the restaurant. Sometimes, the chopstick rests, coasters, and dishes feature Chrome Hearts designs, which always lifts my spirits. While it has the refined atmosphere typical of high-end sushi, you can also sense a commitment to beauty and detail, which adds to its charm. It has a special feeling typical of Ginza sushi, yet it’s not too formal, making it a place where I can genuinely feel satisfied every time I visit. It’s not just about the taste; the space and ambiance make it a special place for me.I rate it a perfect 5.0. By my standards, it’s "the best in my life." No matter how many times I go, my satisfaction never diminishes, and I look forward to returning to this top-level sushi restaurant. Less
