You can enjoy original dishes made from various cuts of beef. The "Tartare" is a luxurious dish combining sea urchin and caviar, while the signature "Thick Cut Tongue" is prepared using three different cooking methods: teppan, gas grill, and shichirin. The dishes are so well-prepared that even with a continuous flow of meat, you never get bored.Watching Chef Kimura grill the meat is truly inspiring for everyone. Known for his "perfect cooking technique," he changes the grilling method and equipment for each cut of meat, skillfully adjusting the seasoning and infusing different aromas from straw and charcoal.Chef Kimura personally grills all the meat for the ten seats at the counter with utmost care. The two young staff members are also well-coordinated, ensuring that the dishes come out at a good pace.The small dishes served throughout the meal are always a delightful surprise.The Michelin Guide awards three stars to restaurants that are worth traveling to for the food. Even as someone who usually eats quite a bit, I found myself thinking, "I can't eat anymore!" The amount served far exceeded my expectations, leaving me completely satisfied and full. I waited for 1 year and 3 months for a reservation. This place is truly difficult to book.The yakiniku experience here feels more like a unique genre called "woniku" rather than just regular yakiniku. Every dish was delicious and full of surprises.I want to go back, but I heard they will be closing temporarily to relocate. It’s very disappointing.I don’t know what the new location will be like or when it will open, but I definitely want to visit again if I can secure a reservation.
The performances happening right in front of you, the flavors, and the chef's personality all provide an enjoyable experience.The menu is extensive, but they adjust the portion sizes along the way, so even those with smaller appetites can taste everything.They also select drinks to pair with each dish, so I recommend going with their suggestions.
NAKATSU WONIKUThis restaurant is located a short walk from Nakatsu Station. I visited with a heavy heart, knowing that the current management will end in May 2027. Once again, it was a thoroughly satisfying experience. Perhaps because there were three small dishes this time, I left feeling comfortably full, which has been a while. I can't wait for my next visit.
