I have become quite fond of the delicious French cuisine at 'Restaurant Honjin' and have visited several times with my friend from Ichinomiya.By chance, I heard that members of the Gifu and Aichi Fine Sake Association were also attending, making for a delightful celebration! ♡The buffet-style feast was exquisite, resembling a high-end hotel buffet.Their signature dishes included:- Nishio's Horoku Tuile- Horoku High-Hydration FocacciaOf course, these were available, and as a huge fan of this high-hydration... I visited Restaurant Honjin, a French restaurant located in Ichinomiya, Aichi Prefecture.Originally established in 1994 as a teppanyaki restaurant, it was transformed in 2021 by Chef Yudai Tajima, who fused French cuisine with teppanyaki. With experience in France, the chef personally selects ingredients from producers, elevating them into exquisite dishes through creative ideas and solid techniques. Known as the first restaurant in Ichinomiya to be featured in the Gault & Millau guide, it has also been recognized as one of the top 100 French restaurants on Tabelog. On this day, I enjoyed the chef's recommended course.First, I was served focaccia infused with horoku rapeseed oil, accompanied by tuile and butter sand. The focaccia had a moist texture, with the sweetness of wheat and the fragrant richness of rapeseed oil spreading pleasantly. The tuile and butter sand were rich yet not heavy, complemented by the refreshing acidity of blueberries, raising my expectations right from the start.Next was a dish featuring caviar, couscous, whale tartare, and egg yolk. The saltiness of the caviar, the rich umami of the whale, the creaminess of the egg yolk, and the light texture of the couscous came together beautifully, creating a harmonious balance of flavors. The horse mackerel carpaccio, prepared with a nerve-stunned technique, was paired with kombu jelly and sake lees fromage blanc. The umami of the kombu enveloped the dish, while the gentle aroma and richness from the sake lees enhanced the sweetness of the horse mackerel, evolving in flavor as I continued to eat.The grilled squid was charred over charcoal, served with squid ink sauce and a side of blanched zucchini and bitter melon. The squid, infused with the aroma of charcoal, had a delightful texture, and the squid ink sauce was lighter than it appeared. With each bite, the natural sweetness and rich fragrance of the squid unfolded.Next was a dish of eel sushi rolls with foie gras, accompanied by cherry beignets. The outside was crispy, while the inside featured fluffy eel layered with the rich depth of foie gras, balanced by the gentle sweetness and acidity of the cherries. The grilled abalone was cooked to perfection, tender and bursting with flavor, enhanced by a rich liver sauce. The sweetness of the charred Brussels sprouts provided a pleasant accent, showcasing the chef's high level of cooking technique. For the fish course, I had the grilled skin of red snapper. The crispy, fragrant skin contrasted beautifully with the tender flesh. The accompanying snap peas added a refreshing sweetness, making it one of the most memorable dishes of the day.Next was a refreshing dish combining octopus, melon, and tomato jelly. Despite the unexpected combination, the acidity of the tomato highlighted the umami of the octopus, while the gentle sweetness of the melon enveloped the dish, creating a summery freshness. The main course featured tenderloin from Shimomura beef. The cooking was impeccable, with the meat surprisingly moist and tender. The egg yolk sauce and garlic miso elevated the umami of the red meat, resulting in a dish that was both robust and elegantly composed. The flambé performance was also enjoyable. To finish, I had garlic rice and grilled sweetfish rice balls. The garlic rice was sautéed to a perfect crisp, with a strong garlic flavor that was not overwhelming, seamlessly connecting the flavors of the meat dishes. The grilled sweetfish rice balls carried the unique bitterness and aroma of the sweetfish, complemented by the charred fragrance, making for a summery conclusion. The cold miso soup served alongside, with okra, provided a refreshing finish to the course. For dessert, I enjoyed baked ice cream, paired with pineapple, blueberries, and caramelized nuts. The harmony of the roasted flavors, the acidity of the fruits, and the creamy sweetness of the ice cream was exquisite. The meal concluded with carefully crafted petit fours and coffee, providing a satisfying finale. The skillful use of charcoal and teppanyaki techniques was remarkable, and the ability of the ingredients to enhance each other was impressive. While rooted in classic French cuisine, the natural incorporation of Japanese ingredients and techniques conveyed the chef's sensibility in every dish. This restaurant is definitely worth the trip to Ichinomiya, and I highly recommend it to anyone visiting the Tokai region. I visited Restaurant Honjin in Ichinomiya for the first time, thanks to an invitation from a regular customer. I had the lunch course, which included delicious dishes like squid, eel, sea bream, and pigeon. I enjoyed some amazing wines by the glass, including champagne, Meursault, and Marsannay. Both the chef and the staff provided excellent service and were truly wonderful people.
This is a truly wonderful restaurant located in a quiet residential area. The parking lot is very spacious, so you won't have any trouble finding a spot. It seems that the current restaurant was renovated from a teppan-yaki place that the owner chef's father ran for over 20 years. The open kitchen creates a vibrant atmosphere. Although it is categorized as French cuisine online, it is an innovative restaurant that transcends genres. Every dish is unique and original, leaving you pleasantly surprised by the flavors. They also focus on local ingredients, using many products from Aichi Prefecture, which is a great point. I was impressed that the owner chef and his apprentice handle both cooking and service. The explanations of the dishes were perfect! The pairing of drinks was well thought out and flawless as well. If you visit, I highly recommend trying the pairings! Less
I visited for both Father's Day and Mother's Day with my in-laws. We started with two appetizers (I forgot to take a photo of one…). For the main course, we had both meat and fish. To finish, we enjoyed an impressive three desserts. The meat and dessert were flambéed right in front of us on the teppan. The experience was worth every yen! Each dish was unique and incredibly delicious. They also offered a course for children.
The fish dishes made with local Mikawa Bay catch were incredibly creative, featuring combinations of ingredients I had never encountered before, resulting in a unique culinary experience. The sashimi was beautifully garnished with ice cream and caviar, making it visually intriguing and absolutely delicious.
I visited during lunch on a weekday. The interior is spacious and provides a comfortable atmosphere. The service was attentive, and they even checked with me beforehand if I wanted to take photos during the flambé. As for the dishes, the meat and the three finishing items were particularly delicious.
