Light soup contains oysters, asari clams and shijimi clams, combined with a shoyu tare using soy sauce from Kyoto. House-made whole wheat noodles flour and are made in a company-owned noodle factory, where temperature and humidity are strictly controlled. The Menya Yūkō Group is based in Kyoto, operating a handful of ramen shops and different concepts.
