淡竹 / Hachiku / Menya Yūkō — Ginza, Tokyo
Light soup contains oysters, asari clams and shijimi clams, combined with a shoyu tare using soy sauce from Kyoto. House-made whole wheat noodles flour and are made in a company-owned noodle factory, where temperature and humidity are strictly controlled. Topped with thinly sliced rare pork chashu, bamboo shoots and negi.
The Menya Yūkō Group is based in Kyoto, operating a handful of ramen shops and different concepts. The owner trained at the shop Jinrui Mina Menrui in Osaka, which is where several of the staff from Menya Yūkō met. The name Yūkō was chosen to honor the original Kyoto store manager. This Ginza store is franchise-run and the first outpost in Tokyo. 18 seats. Since February 19th, 2022.
