最近ではのどぐろの昆布締め、岩牡蠣のソテー、フカヒレの姿煮、生ハム マナガツオのフリット、白いかなど、鮨ふじながの唯一無二の味が楽しめる。名刺がわりの大トロの握りは筋を一本残らず抜き取り、包丁目は50 ヵ所以上。旨みのみがダイレクトに口の中に飛び込んできて、すっと溶けるとの事。オリジナルの坦々麺を締めで味わえることもある。

Recently, Sushi Fujinaga has been serving unique dishes such as Kombujime, sautéed Japanese oysters, shark's fin stew, prosciutto and butterfish fritters, white squid, and more. The signature dish, Otori nigiri, has more than 50 knife marks. It is said that the deliciousness of the fish leaves a notable flavor and melts easily in the mouth. Customers can also enjoy their original Tantanmen.

Visited on the last day before they moved location. More modern in style but precise and with an outstanding shari flavour balance. The otsumami in itself is almost equally as impressive, with caviar, anago, unagi and even some proper fukahire thrown in for good measure. Seems to be rather difficult to get a reservation these days and I can definitely understand why.
