I revisited Takajo Kotobuki!I always think about how Tamahagane reaches extremely high temperatures, so while it seems easy, it must require significant skill to cook it properly.The duck is served with a perfect level of doneness, making it truly mysterious how I could eat it forever.Once again, it was absolutely delicious!!It was a great meal!

It is said that securing a reservation here is a formidable challenge, to the extent that there are blogs dedicated to explaining how to do so. Fortunately, I was blessed with a wonderful opportunity to visit for the first time.As I stepped through the noren curtain, I was greeted by a stylish and serene Japanese space that radiated a deep sense of history.Here, you can experience "real duck," which completely overturns the common perceptions of duck dishes. The beautifully arranged meat on the plate shines with a stunning deep red hue, and its juiciness and quality are immediately evident, setting it apart from anything else.According to the owner, "Duck pairs perfectly with red wine." Following this elegant advice, I brought along a special red wine (Kenzō Estate's Murasaki) to ensure a sublime pairing.As the meal commenced, the warm and friendly owner, along with the veteran staff who worked in perfect harmony, created a wonderful atmosphere.The duck dishes, expertly grilled right before my eyes, were perfectly crispy on the outside and astonishingly juicy on the inside. The moment I took a bite, a rich, wild umami burst forth, perfectly harmonizing with the deep tannins and floral notes of the red wine, creating an explosion of flavor that thrilled my senses. The dish garnished with white leeks highlighted the gentle, refined broth and the duck's potential, making it impossible to put down my chopsticks.To conclude, I enjoyed a finishing rice dish, and the meal wrapped up with refreshing large melon and cherries, enveloping me in bliss.This was not merely a delicious meal; it was an artistic experience of grilling that tantalized all my senses. They say summer duck isn't tasty, but I don't agree. The duck meat grilled by the chef here is always delicious. It's so good that it can overshadow the taste of the wine. Whether it's winter, spring, autumn, or summer, it's always delicious. I've heard it's very good for your health, and I can't wait to have it again.

The grilling method changes both the texture and flavor.The moment it entered my mouth, I experienced a wild taste and umami all at once. There was no gamey smell, just the aroma of the duck itself. The sweetness of the fat spread out afterward. I was truly impressed by this natural duck!The aroma of the wild, the scent of blood, and the smell of char.Thank you for providing such a rare experience!Everything was wonderfully delicious until the very end! I visited Takajo Kotobuki in Asakusa with a group of six on a weekday evening.This restaurant does not accept reservations from newcomers, so I was finally able to visit thanks to a friend who has been a long-time patron.Even before entering, there was an atmosphere that suggested this was no ordinary place.We enjoyed five different types of duck, sourced from three birds.Currently, they use frozen duck meat, but according to the owner, from November 15 to February 15, during the hunting season, they serve fresh duck.However, with today’s advanced freezing technology, I honestly didn’t feel that the frozen meat was inferior at all.Some might associate duck with a strong flavor or toughness, but this was completely different.The tender cuts, the enjoyable textures, the bouncy mouthfeel, and the smoky aroma from the cooking method all varied greatly by cut and preparation, leaving me amazed at how much character can be created with just duck.The precision in cooking was particularly impressive.They allow you to bring your own wine without a corkage fee, so we brought some along.I believe that the experience of such a restaurant includes what you drink as well.It would be a lot of fun for wine enthusiasts to visit together.The finishing dish, the chicken rice, was also incredibly delicious, making for a highly satisfying course until the very end.Moreover, the ningyo-yaki (doll-shaped cakes) we received as a souvenir were delightful, adding to the overall Asakusa experience.There are a few rules at the restaurant:- No photos of the dishes allowed- Wine and champagne can be brought in (no corkage fee)- Payment is cash only, settled in one sum- Dress code is casual (but be aware that the smell will cling to your clothes)Including these rules, it gave off the impression of a restaurant that upholds a culture close to being by referral only.Overall:- The exclusivity of not accepting new reservations adds to its charm- It completely changed my perception of duck dishes- The individuality of each cut was fascinating- An ideal environment for wine lovers- A renowned establishment that embodies the traditional culture of AsakusaIt was not just "delicious," but a place that will remain in my memory as an experience.
