【Enjoy Modern Chinese Cuisine in a Sophisticated Space】A high-end Chinese restaurant in Nishitenma. Owner-chef Koji Higashi was born into the family of "Bifun Higashi" and became independent after working at establishments like Ishin-go. Within the same building, there are sister restaurants with different price ranges and concepts, and AUBE stands out for its focus on a more refined atmosphere and course dining.This time, I made a reservation for the lunch course (JPY 16,500). The space leading from the lounge at the top of the stairs to the impressive counter is quite striking. Although Chef Higashi was not present during lunch, both the culinary and service staff were attentive, and I had no complaints in that regard.The jade-colored dan dan noodles were visually stunning with a smooth texture, and the numbing sensation from the Sichuan pepper was delightful. The turtle broth and shark fin dumplings were also notable for their deep flavors. The two types of Peking duck were creatively presented, and the wine suggestions were well thought out to complement the dishes.While the price for lunch is not absolutely cheap, the quality of the space, food, and service is all at a high standard. Although it's a bit away from the Shinchiku area, there are several creative Chinese restaurants nearby, and this one is the best.The owner's personality, the staff, and the interior design all come together to make it the top choice.The cold pasta with Sichuan pepper,Spring rolls and char siu,Two types of Peking duck,Shiitake and abalone soup,Corn shumai…Everything is delicious! The waiting area was luxurious, and the restaurant featured only six seats at a ceramic open kitchen counter, creating a calm and chic atmosphere that felt like a different world.As it turned out, I was the only one who made a lunch reservation, resulting in a gorgeous private dining experience. Each course was meticulously prepared, matching the elegant ambiance of the restaurant. I felt a sense of familiarity as I learned that this place is a sister restaurant of Beefun Higashi in Shimbashi, which I had been wanting to visit for a while. The standout dishes included two types of Peking duck and a fish dish, Sawara, which paired perfectly with the black vinegar sauce, along with grilled asparagus. These dishes offered a level of creativity and depth of flavor that I had never experienced before. I enjoyed two glasses of white wine and a glass of rosé, all of which were delightful.
