On a friend's recommendation, I visited this place with their reservation. The chef's skillful fish cutting looks bold and decisive, yet the flavors are incredibly delicate, showcasing a high level of craftsmanship. The selection of drinks is excellent, making it easy to indulge. I've added another restaurant to my list of places I want to revisit.

Surprisingly, the purple sea urchin was refined yet had a strong taste of the sea, and my partner and I couldn’t help but order more, saying how delicious it was! The "Sea Bream" symbolizes the restaurant's philosophy of using local ingredients—not bland, but delicious with each bite.The flow of tuna is also impressive. The "Otoro" (fatty tuna) from Sado is perfectly balanced by the rice's acidity. The "Akami Zuke" (marinated lean tuna) leaves a sticky umami on the tongue, while the "Chutoro" (medium fatty tuna) has a texture that allows the layers of fat to dissolve. Enjoying the fat without heaviness is undoubtedly due to the power of the rice. The "Small Horse Mackerel" is just starting to come into season, yet it already has a surprising amount of fat. The freshness typical of morning catches combines with the aroma and sweetness of the blue fish, achieving a delightful balance of lightness and satisfaction. The "Purple Sea Urchin" from Awaji not only offers sweetness but also leaves a lingering taste of the sea.In the final stages, the "Anago" (sea eel) shines with its meticulous deboning, melting in your mouth. Starting from JPY 46,500, including drinks.I made a reservation to visit again because the last experience was so delicious.This time, I came with my usual gourmet friends.We enjoyed an abundance of fresh fish from the Seto Inland Sea once again.It feels like this place might become a regular spot for us, as long as we can secure a reservation.
While age and experience are certainly important, the unparalleled sense of style here is truly remarkable! Not only is the chef's skill impressive, but their gestures, expressions, way of speaking, and interactions with their apprentices were all astonishing. I tried to replicate the Hotaru Ika (firefly squid) TKG (Tamago Kake Gohan), but it turned out completely different. It was so delicious that I ran out of words to describe it. It was a great meal!
