As summer was coming to an end, the potential of the chicken really stood out, making for a wonderful course.Rather than highlighting any specific dish, everything was excellent. If I had to mention one thing, it was the chef's bold decision to avoid using spices in the final curry, despite clearly having a fondness for spice and international cuisine. Due to my own careless mistake, it has been a year since my last visit to Yakitori Kohane (⌒-⌒;)I’ve already made a reservation for over six months from now, and the popularity of this place hasn’t diminished at all. Chef Hiroyuki Yamada became independent from the Seirin Group in March this year, becoming the master of his own castle.The Amagi Shamo chickens raised in the spacious, stress-free chicken coop at Kohane have thin, crispy skin and meaty, juicy flesh that offers a satisfying chew—each bite releases deep flavors and umami that fill your mouth.The chef skillfully controls the smoke and fire while also being a talented pastry chef. I was invited by a friend to visit this place, which I had wanted to try for a while, so I was filled with anticipation.The unique feature here is that the yakitori is cooked to be juicy rather than crispy, resulting in a moist and flavorful finish.However, the price easily exceeds JPY 20,000, which makes me think it might be a bit steep.I can't help but feel that there are places offering the same quality in the JPY 10,000 range.
