Aesthetic: Komada-san is a collector of yakimono (ceramics) and is very proud of it. A new vessel appears with each drink, even when the tea is being refreshed.

Okayama is probably most easily recognized by tourists as the largest stopover between Kobe and Hiroshima, and sort of a gateway to Shikoku and the Seto Inland Sea. There is little to do there that is explicitly destination-worthy which, in a word, is wonderful. In late summer or early fall you can find some of the most expensive and mind-bendingly... More

Wild "blue" unagi was also served. This might have been my first time try "ao-unagi". One potential sign of wild origins for eel in the thickness - can tell from this pic that it's much more plump than typical. Served just with some shoyu tare, no heavy grilling. Beautiful flavor.

Two rice dishes appear to prep diners for the start of the sushi course. First, dried hotaru ika (this was late May, so appropriate) and its guts. Then Setouchi managatsuon with negi. The most interesting element of these dishes was the contrasting flavors they brought out in su-meshi. Almost like drinking the same wine alongside a steak and then dessert.... More

The only neta I recall not being from the Setouchi region at this meal were the maguro, kohada and masu. By the way @69leonardst these plates look a bit familiar...

And now a set of local items that I've never/rarely seen...

Local bei-ika. Sort of like hotaru squid but meatier, butterflied open to rest on top of the shari.

"First of season" untreated kuro-uni.

Ozo-ebi. Sato san mentioned he only sees this 2 or 3 times a year.

Inarizushi with the su-meshi. Because this is Kansai, after all.

Stunning, pristine local seafood. Buri from Imabari and uncured ma-saba. Buri typically has a reputation as a winter fish sourced from the other coast of Japan, but this piece (from a notably smaller fish) shattered that preconception. I called this one in my notes "Sawara-style" because it has been finished over bincho to crisp up the skin after being... More

Windowpane test ✅
Madai from Imabari that had been caught 10 hours earlier by Fujimoto-san. Doesn't get more local than this.

No student of Yoshitake San *doesn't* serve awabi with sauce of its own kimo. This dish has become so uniquitous these days that it's almost been forgotten as a Yoshitake signature. This was a fantastic kuro-awabi from Futagami island off Kyushu.
