The Perfect Bluefin Chutoro @sendo.nyc 🍣🔥🍣

This cut from Ehime, Japan shows why many consider chutoro the very best part of Bluefin Tuna. It has more flavor and umami than it's fattier cousin, Otoro, but still retains the richness and soft texture that you cannot get from the leaner Akami. This cut especially is a beauty 🤤
