Like a dessert cloud and every bit as amazing as I remembered it. An absolute must at least once in your life! The Frozen Soufflé at @cesar.newyork, this time made with Dulce de Leche and Golden Raisins.
Undoubtedly belongs in the HALL OF FAME of the best dishes in the WORLD. Chef César Ramirez’s iconic black truffle-accented Hokkaido uni brioche toast at @cesar.newyork . So many imitators, but nothing comes close to the original. Even better with shaved black truffles on top. @cesar
I first experienced Cesar Ramirez's food, like so many others, during the @michelinguide 3* days at Brooklyn Fare, so when Cesar received 2* within 5 months of opening there was really no surprise.
Trained by Bouley, and forever a lightning rod for controversy, it's only a matter of time before the Mexico City native gets back his third for food that is as precise as it is pricey.

White truffle season is always special, but experiencing it through the lens of「César」is on an entirely different level. If there is one tasting menu to prioritize before the season ends, this is an absolute must.
Chef César’s mastery lies in his incredible precision—using the heady, aromatic power of pristine Alba truffles not just as a lavish topping, but as a seamlessly integrated component that elevates his signature French-Japanese seafood craft. Every dish crowned with those delicate, paper-thin shavings strikes a flawless balance between rich, decadent warmth and subtle elegance.
The depth of flavor throughout the night was extraordinary, proving once again why his dining room remains one of the most compelling culinary experiences in the city. Truly an unmissable highlight of the season.

November 14, 2025 An absolutely remarkable and enjoyable evening. Dinner at @cesar.newyork with Chef Ramirez in top form; even better than our visit last year and clearly a 3 star candidate. Made even more special by @albi_santini joining us and making a new acquaintance in Dan from Tennessee. Chef Ramirez and team, all the very best at the Michelin ceremony in Philadelphia next week.

César – A Culinary Masterpiece Beyond Compare
César is not just a restaurant; it is the pinnacle of fine dining in the United States, perhaps even outside Japan. Chef César Ramírez, already a legend in his field, has found a new home where his mastery can fully flourish, elevating his cuisine beyond anything seen in his Brooklyn days. The evolution of his cooking is evident in every bite—more intricate, more layered, yet always finely calibrated. This is the work of a true artist at the height of his craft, pushing the boundaries of what is possible with seafood.
Housed in a meticulously restored historic building on Hudson Street, César is as much an architectural statement as it is a culinary destination. Designed by Martin Brudnizki, the space exudes elegance and warmth, creating an intimate yet immersive experience. Unlike so many fine dining establishments that feel sterile or distant, César invites you in—offering not just a meal but an odyssey through Ramírez’s singular vision.
The Chef’s Tasting Menu is a revelation. Dishes like the Aji Nigiri showcase an astonishing depth of umami, while the Uni on Brioche is an indulgent bite of pure oceanic luxury. Each plate is a study in precision, where every ingredient, no matter how complex, finds its perfect place in harmony with the whole. Ramírez’s mastery of sauces remains unparalleled, enhancing flavors without overwhelming them. Every course feels like a carefully composed movement in a symphony, drawing diners deeper into his world.
It is incomprehensible that César has been awarded only two Michelin stars—this is a restaurant that stands above not just its peers in the U.S., but almost anywhere in the world. Ramírez has transcended expectations, creating a dining experience that is both deeply personal and universally extraordinary.
At César, the journey continues. And for those lucky enough to be seated at his table, it is a journey they will never forget. Less

After nearly a year of anticipation, I’m savoring the culinary creations of one of New York’s finest chefs @chef.cesarramirez once again. His newly opened namesake restaurant @cesar.newyork needs no introduction — it’s a masterpiece from the very start, evoking nostalgia for all the good old days.
Compared to before, the seasoning here is more restrained, letting the original flavors of each ingredient shine. For those familiar with his previous spot, the menu will feel like a welcome reunion with a few delightful surprises. The standout of the night for me was the tomato and burrata dish, a symphony of flavors and textures through various expressions that truly impressed.
There’s no question — the king is back, and this time, it promises to be even better than before.
