Tucked inside Munich’s iconic @bayerischerhof_munich Atelier holds two Michelin stars, but feels like it’s cooking for a third.

This is fine dining rooted in French technique, elevated with Japanese nuance, and grounded in the best Bavarian produce. A culinary triad with zero dogma, only precision.

Take the white asparagus with char caviar and miso hollandaise. Or the pikeperch with paper-thin kohlrabi, crab beurre blanc, and herb oil. These are textbook 3-star dishes, executed with artistry and intent.

Even the signature sweetbreads with lentils and sherry sauce feel unshakably personal, paired with a crisp, expertly chosen rosé by the charismatic sommelier.

Desserts rarely match the savoury in dynamism, but here, they were equals.
From a cheese course and pre-dessert of yellow beet and passionfruit to a strawberry and lemon gratin finale, the meal ended on the same high it began. A lost art, rediscovered.
