Early August marks the season for sweetfish. Although the main dish features Tsugani (freshwater crab), I enjoyed a course filled with sweetfish. The photo shows sliced koi and sweetfish sashimi. In addition, I savored sweetfish kara-age (fried), sweetfish nanban-zuke (marinated), grilled sweetfish, Tsugani rice, and Tsugani soup, all served in beautiful Karatsu ware, showcasing the local ingredients. Each dish was elegantly flavored, and I had a delightful time with the charming owner.

I previously visited this restaurant with the owner of a tea kaiseki restaurant, and I returned for lunch during my recent trip to Karatsu.This renowned Japanese restaurant beautifully reflects the changing seasons in each dish. The cuisine, elevated through delicate techniques, allows you to savor the blessings of the clear streams and the breath of the mountains, providing a memorable dining experience that embodies the local culture and history.The building, established in the 9th year of the Tenpo era, features a calm design reminiscent of a historic farmhouse, nestled by the clear stream of the Tamashima River.In this tranquil environment, you can see only the river and mountains from the windows and the raised seating area, enjoying the sounds of nature, such as the gentle flow of the river and the chirping of insects.In the waiting room, which has a charming irori (traditional hearth), I felt the warm hospitality of the kind proprietress. The walls are adorned with photographs of notable figures and politicians, ensuring that there’s never a dull moment, and my expectations soared!The course I enjoyed that day was the River Fish Bamboo Course for lunch, priced at JPY 12,000, which is slightly lower than the middle course, so I opted for it.This course featured a selection of seasonal delicacies, including small dishes, boiled eel, koi sashimi, grilled river fish, two medium-sized tsugani (freshwater crabs), tsugani soup, tsugani rice, and fruit.The boiled eel was lightly blanched and then chilled, served with homemade red onions from the garden and a special ponzu sauce. The delightful texture of the tender skin and the firm flesh created a refreshing taste experience.The grilled eel, prepared without sauce, was charred to perfection, crispy on the outside while remaining surprisingly fluffy and tender inside, showcasing the strong umami and refined sweetness of the river fish.The signature tsugani at Ame Gen is surprisingly rich in flavor for its small size, with each bite bursting with intense sweetness. The crab miso packed in the shell stands out with its deep richness and rich aroma, making it a perfect pairing with Japanese sake.The yamame (a type of trout) is a dish that beautifully reflects the clarity of the stream where it was raised. You can enjoy the straightforward flavor of the grilled fish seasoned with salt and the traditional technique of ame-yaki (sweet grilled fish), each offering a unique charm.I look forward to coming back for a light eel set meal next time. I visited Ame Gen, a restaurant that has been in business for over 200 years since the Tempo era, located by the Tamashima River in Hamadama Town, Karatsu, Saga. This establishment specializes in river delicacies such as sweetfish, crab, and whitebait, as well as wild vegetable dishes. Since the first generation dealt with syrup, their sweetfish and eel grilled with syrup are also delicious.Upon arrival, I was first taken to the waiting room and offered mugwort tea.I ordered a course meal along with the grilled eel with syrup as an extra.I was guided to a private room with a beautiful view of the river, where the kind owner carefully explained each dish. The tableware was made of Karatsu and Arita ceramics, and the vegetables were fresh and homegrown, picked just for this meal, making them incredibly tasty. The yuzu pepper was also homemade.The dishes included sweetfish marinated in vinegar, lightly boiled eel, sweetfish fillets, koi soup, grilled sweetfish, sweetfish grilled with syrup, eel grilled with syrup, and crab. Each dish was beautifully presented, and I enjoyed them with vinegared miso and wasabi, along with refreshing, juicy vegetables. On the first day of my trip to Fukuoka and Saga, I visited Ame Gen for lunch.It took about an hour by car from Fukuoka Airport to Karatsu. The previous day had been rainy, so I was worried about the weather, but today was clear and offered a fantastic view with the Tamashima River flowing right in front of us.Ame Gen is a long-established restaurant specializing in river fish, founded in 1838.This time, I reserved the bamboo course, which features river fish and Tsugani (freshwater crab).The grilled eel was tender and had a delightful texture, served with a refreshing ponzu sauce. The accompanying purple onion was also sweet and delicious.The sashimi of carp and sweetfish was served with a vinegar miso and yuzu pepper. The slight spiciness of the accompanying wild ginger leaf paired well with the vinegar miso, adding a nice accent.The vegetables are reportedly grown in a garden right in front of the restaurant, and they were all fresh, allowing us to truly appreciate the quality of the ingredients.While it was a bit challenging to peel the shell of the Tsugani, the deliciousness made it easy to get lost in the experience.The Tsugani rice and miso soup served at the end were also exceptional.Though it may not be flashy, this restaurant allows you to fully appreciate its history, the blessings of the land, and the quality of the ingredients.The staff were very attentive in their service and explanations of the dishes, making me want to visit again.It was a great meal.
