During my trip to Hitoyoshi Onsen, I was recommended this place by an acquaintance and went there together. The counter seats are limited to about 10, but it quickly filled up due to the staggered seating, even on a weekday. During my trip to Hitoyoshi Onsen, I was recommended this place by an acquaintance and went there together. The counter seats are limited to about 10, but it quickly filled up due to the staggered seating, even on a weekday. I enjoyed some yuzu sake and umeshu, both of which were reasonably priced.A variety of appetizers were served at the beginning, and each one was delicious. The swordfish and conger eel were carefully deboned, making them easy to eat. The sushi was made with red vinegar, which paired perfectly with the toppings. The horse mackerel had an Italian-style seasoning.Everything from start to finish was delightful. I hope to return in winter to enjoy seasonal dishes. Despite being in Kumamoto, I felt as if I was enjoying sushi in Tokyo. The unique personality of Chef Mimuro shone through, making the overall experience truly delicious. The dishes and sushi from Sushi Mimuro left a lasting impression on my heart during this trip. I definitely plan to visit again when I come to Hitoyoshi.

As a result, I had to settle for a later time at 8:30 PM. On the day of my visit, I traveled an hour and a half from Kumamoto to Hitoyoshi, and after being active since early morning, I was already exhausted by the time I arrived at the restaurant. I arrived a bit early and held a faint hope of being seated sooner, but when I peeked inside, the counter was completely full. It was clear that this popular restaurant is truly loved by discerning local customers.Finally, at 8:30 PM, the session began with just two of us, including myself. This allowed for a quick and efficient dining experience that lasted about an hour.Physically, I was in quite a tough condition, but the quality of the dishes served was undeniably impressive. The appetizers were plentiful and each presented with unique twists that delighted the eyes. The subsequent nigiri was robustly styled, with both the rice and toppings generously sized. I was particularly amazed by the meticulous craftsmanship; the chef skillfully adjusted the temperature of the rice according to the nature of the toppings, serving them in a state that harmonized perfectly in the mouth. Half of the ingredients were sourced from the nearby waters of Kyushu, while the other half came from Toyosu.To be honest, due to the intense fatigue of the day and the anxiety from the delayed reservation, I couldn't fully enjoy the experience to the fullest.However, reflecting on the quality of the dishes and sushi, if there were a place like this near my home, I would want to visit regularly. I visited Sushi Mimuro in Hitoyoshi Kumamoto during my trip to Southern Kyushu, having made a reservation based on its great reputation. We opted for the Omakase, starting with somen noodles topped with abalone liver sauce and sea urchin, followed by sashimi of stone bream and whiting. The grilled dishes included fried mejikari, hotaru ika (firefly squid), and shima ebi (striped shrimp) paired with a unique sake dish, as well as a salad of blue crab and mango jelly, and a vinegared dish of mozuku seaweed and junsai (water shield). We also enjoyed 13 pieces of nigiri, all expertly crafted in the Edomae style, delivering an exceptionally high-quality taste. The selection of sake was impressive, and we indulged ourselves. In conclusion, "The excitement of this one night was worth nearly JPY 20,000, simply amazing." The quality is beyond my words. The variety of appetizers made for such a delightful evening. What stood out the most were: - The thick and large, flavorful clam nigiri. - The red meat nigiri, which had a pleasant firmness that I had never experienced before. I thoroughly enjoyed the Japanese sake, and even after adding four more types, the total came to JPY 18,590. This time, I took a highway bus from Kagoshima to Hitoyoshi. This was necessary because JR has not yet resumed service since the flooding in 2020. Moreover, it was after this disaster that the chef moved from Tokyo to Hitoyoshi. I had a truly wonderful night.
