In conclusion, "The excitement of this one night was worth nearly JPY 20,000, simply amazing." The quality is beyond my words. The variety of appetizers made for such a delightful evening. What stood out the most were: - The thick and large, flavorful clam nigiri. - The red meat nigiri, which had a pleasant firmness that I had never experienced before. I thoroughly enjoyed the Japanese sake, and even after adding four more types, the total came to JPY 18,590. This time, I took a highway bus from Kagoshima to Hitoyoshi. This was necessary because JR has not yet resumed service since the flooding in 2020. Moreover, it was after this disaster that the chef moved from Tokyo to Hitoyoshi. I had a truly wonderful night. If I could contribute, even in a small way, to the revitalization of Hitoyoshi, that would be the best outcome. Thank you to everyone at Sushi Mimuro. It was a feast!
