Juno the Bakery Copenhagen

(SWIPE FOR MORE PICS) Although I had written about most of the restaurants I visited in Copenhagen last year, I found myself having a hard time finding restaurants open for lunch between Monday - Thursday. Luckily Copenhagen has amazing bakeries and cafes. It is almost hard to find bad bread and coffee. One place that has become CPH’s must visit location is @juno_the_bakery which opened their door since Dec 2017 by Noma alum @emilglaser . I visited in 2018 and 2019 and both times I needed to queue in line (which used to be extremely rare in Copenhagen at that time).

There are a variety of bread and baked goods at Juno but the one that has become iconic is their cardamom buns (pic 1-3). Before I tried it I was still thinking, how good can this be to attract people in a city which does not have a queuing culture to line for 30 mins or even an hour for some buns. But to know meant I needed to try and just like everyone else I queued early in the morning, and then my first bun. 😱😱😱 This was SO GOOD! It had this really nice texture like a cushion that with just enough air to feel fluffy but also dense enough for the “substance”. And the cardamom flavor and sugar 😍😍😍😍😍. I never had cardamom buns before and I was in love 💞. And now every time I come to CPH, I need to come here to get my cardamom bun fix.

Besides Cardamom buns they also have other pastries and bread. Pic 4-5 are the pistachio danish and croissant and they are definitely good specimens but my number one vote still goes to the cardamom buns. They had “inspired” so many bakeries around the world to do the same but even after I tried and tried still find the ones at Juno to be the best!

They just moved to a new location a few days ago but it is right next to the old location with a bigger and better space. Cannot wait for my cardamon buns when I visit Copenhagen next time! Less

These are some pastries I tried at Juno in the past. Pic 1-5 were cardamom bun, croissant and pistachio “snegl” (snail). Cross section of croissant (pic 2-3) was very legit, cardamon buns (pic 4) were unbeatable, the snail (pic 5) was crispy and crusty pastry (actually I like this more than the one at Du Pain et des Idees in Paris because of the pistachio paste in between the layers.

Pic 6-9 was cardamon bun + almond croissant + chocolate and walnut snail. The almond croissant had a almond cream like frangipani but less dense, flavoured with tonka beans and fragrant citrus. So good! 😍
