Recommended bowl: Jiro style clone

This Jiro inspired shop opened its Jimbōchō flagship in 2009, ironically right in front of a Ramen Jiro branch (which has since moved). Tonkotsu shoyu soup is made with pork back fat, bean sprouts, cabbage, chashu and garlic. Noodles are supplied by Asakusa Kaikarou. During the summer time they have an epic Hiyashi Chūka (chilled ramen). Yōjimbō belongs to the same group that owns Senrigan in Setagaya, with a second branch in Hongo-Sanchome. Volver a donde Manuel Ponce cocina, sin concesiones, sin florituras, sin más limitaciones que las que él se quiere imponer, ajeno a modas o críticas. Y porque está Miguel, su hermano, que ha conformado una carta de vinos de categoría, que maneja la sala con un talento natural y un equipo bien engrasado. Y porque siempre se genera ese ambiente que invita a tomarse un aperitivo en la barra, a abrir una botella especial y a solazarse con unos destilados de categoría en la sobremesa.
